The Year That Was…

Aha… the time of the year has come to sit and relive some of the enduring moments that has gone by 2010. And by far the most fascinating one is Lite Bite, my tiny space on the net, linking worlds apart.

A string of reminiscences….fellow bloggers, a meet and Tasty Bites.

With the above note I would like to bring forth WWC, the first event on Lite Bite.

Stollen-An Egg less Tea Time Bread

Stollen is a bread like fruit cake baked with yeast, flour and dried fruits and nuts in it. This is a wonderful Tea time snack and a great breakfast treat which is quite easy to make. It stays good for many days and is extremely flavorful with loads of citrus zests, candid peels and spices in it.

A Healthy Wholewheat Veggie Pot Pie

Pot pie is a baked pie recipe, which is filled with loads of veggies and covered with whole-wheat or flaky pastry. Easy to make and healthy, these are a perfect and wholesome dish for the cold winter nights.

The top crust can be made flaky with refined flour or a bit dense and chewy with wholewheat. Since I like whole grain in my baking recipes, I baked this pot pie with whole-wheat pastry which was similar to a baked wheat biscuit texture.

Easy Strawberry Drop Cookies

Drop cookies are my favorite and for sure some of the easiest goodies to bake. With no kneading, meddling with rolling pins, cookie cutters, refrigerating the dough, these are an absolute hassle free baked delights. Drop cookies have soft & chewy center unlike the normal brittle and crisp rolled out cookies. The dough for the recipe to make these cookies is slightly soft and can be dropped on the baking sheets directly with a spoon.

These egg less Strawberry Drop Cookies are perfect for pepping up a dull weekend, and with wholewheat and fresh fruits these are a real health bonanza. A treat when you have a desire to indulge in good food but are too lazy to make or bake 🙂

Easy Eggless Wheat Germ Muffins

Wheat Germ is one among the precious food ingredients which often fight for a place in my refrigerator. Blueberries, black current, prunes are some of the few contenders. Since getting these exotic foods is difficult here, I normally buy them in large quantities whenever I get a chance to do so.

I dry roast these Wheat germs and store them in a zip lock inside the refrigerator. These then get into my baking, porridge, chapattis, chutneys and various other recipes. Wheat germ gives a beautiful nutty flavor to the dishes.

Baking butterflies….and a Perfect Eggless Orange Loaf

It just struck to me that I have not posted any bread recipes using the yeast till date. The first time I baked a bread was way back in 1984 during my 10th board exams. I wanted to divert myself to something more exciting and appealing than the boring and lifeless formulas and equations of chemistry 🙂 And bread making was one such area.

I did bake a bread and my mom took it to her office and asked (or forced, should I say) everyone to taste and pass on the comments to me. I came to know much later that while I passed in good colors in my board exams, my bread sank 🙁

Still whenever I bake a bread I have butterflies in my stomach. More often I opt for baking my breads with leavening agents (baking soda) which is much easier and quicker, rather than baking with yeast.

A Date with Sunflower Seeds – Baked Healthy Ladoos

Come festival season and all the shops get decked up in new attire, lighting, posters and various gimmicks to attract customers. The most active participants during this time are the sweet sellers. The colorful and attractive array of sweets in the shops are tempting enough to give a try.

Most of the sweets in the shops may not confer to the quality of the ingredients used in it, due to the mere quantity and demand of such goodies. For the same reason I wanted to give a slight healthy twist to this traditional sweet recipe which is almost synonym to Rajasthan.

Churma Laddoo is an integral part of welcoming any guest in Rajasthan. I bake the wholewheat flour balls instead of the normal practice of deep frying them in ghee.

Lentil Stuffed Indian Flat Breads – Protein Packed Lunchbox

To make a filling as well as a kids-friendly lunchbox day in and day out, is a challenge for every mom. A dish repeated twice a week becomes a boring stuff and is brought back half eaten as a revenge on moms.

Most of the days the lunchbox menu is decided in the morning itself and the days of the week are remembered according to the lunchbox recipes. Monday is for variety rice, Tuesdays are reserved for wholewheat noodles, Wednesday is dedicated to stuffed chapattis and like wise. This one is a favorite menus for Friday lunchbox.
