Veggies Made Easy – Ridge Gourd Sabzi

Ridge Guard is a beautiful climber which can adapt to any climate. A couple of these pretty climbers are growing majestically in the backyard of my house and they have reached the terrace of my house. The vegetable also called Taroi or Turai in Hindi, is a delight to watch on these pretty climber. I love to cook it often as it takes hardly 5-6 minutes to cook and is healthy too.

Air water and food are the most natural and essential factors for life on Earth. . These three life-giving components were supposed to be consumed in their natural and pure form. The first two have escaped the cruel handling of human beings to some extent, but the last one – Food is adulterated to its maximum limit.

Where the discovery of fire has several advantages accrued to it, it also introduced cooked food, which was further complicated by the invention of spices and various methods of cooking, leading to various diseases.
I have a fair idea about the food pyramid, which I thought was good enough for my biology exam only 🙂

Rice Made Easy – Let There Be Carrots

h recipe tasting better than the other. Coriander rice, cabbage rice, lemon rice, pepper rice, tamarind rice, mint rice to name a few.

Rice used to be just an accompaniment to dal (pulses) & vegetables, as plain rice or pulav a few years back. But not any more! I am amazed by the versatility and varieties of dishes this humble grain creates, after coming to the land of rice.

You name an ingredient and there is a recipe for the same, and each recipe tasting better than the other. Coriander rice, cabbage rice, lemon rice, pepper rice, tamarind rice, mint rice to name a few.
Phew….
Carrot rice dons many avatars, with pepper, onion, clove and green chillies into the recipe. And with every version tasting unique and different.

Wraps N Rolls – Veggies in Wholewheat Indian Flat Breads

The next in the series after the Colorful coins for kids lunchbox is wraps & rolls made from Indian bread called chapattis. This simple & handy is one of the favorite of my son. A perfect lunch idea for hyper kids who are always on the move and disregard the idea of sitting and having lunch at one place.
Wraps N Rolls are simple vegetable curries wrapped in chapattis, very much kids friendly and healthy too. A common lunch option in many parts of India where wheat is a staple food.

Eggless Carrot Muffins

Easy to bake, with very few ingredients and steps to go, muffins could be any first timers’ delight.

I like to bake muffins with added fruits and flavors to add variety for my kids’ snack box. Carrot being one of my favorites in vegetables I often use it in most of my cooking. Carrot muffins can be made in advance and frozen in refrigerator for future use. You can defrost the muffins in microwave whenever you require. It stays good for almost 4-5 days at normal temperature, in an airtight container.

Veggies Made Easy – Simple Okra Recipe

Okra or Ladies finger is one of my favorites in vegetables. I like to cook it the most simple way to get the taste and flavors of the veggie. This simple okra recipe is the most basic, quick and require very few ingredients to go. Makes a healthy lunchbox option.
