My extravagance is my little kitchen garden, these plants & flowers are the very first thing I look at and talk to every morning, it gives me so much pleasure” said mom caressing the tender bean climber near her chair. Mom’s little kitchen garden is indisputably one of the best kept secrets of the recipes she dishes out year after year. Fresh vegetables or aromatic herbs, you name it and you get it from this modest 20×20 sq. feet kitchen garden of hers. I really admire how dutifully she manages her time between cooking, gardening and doing routine mundane chores single- handedly.

It’s a delight to watch her pinching tendrils, tying ropes to support the tender climbers, plucking weeds, carefully drafting the saplings from plastic sachet to soil beds and remembering the age of every plant.

To me the best thing about vacation is brainstorming the places to visit and then making a tentative plan for the entire trip. Online reviews and Google comes to rescue for searching a comfortable hotel/resort, book safaris in advance and design the itinerary all by myself.

Years of traveling has made me a planner and I often look out for off beat destinations in India to avoid unruly crowd, commercialization of tourist places and to experience the thrill of meeting new challenges all the way. Traveling together to some known and some unknown destinations has made the nature lover, the adventure enthusiast and the history buff in my family come out in open. We now appreciate the ruins of history and pristine beauty of mountains in the same breath.

Most of the days I prefer dishes which need less time to cook, have fewer ingredients and still retain the freshness & nutrient quotient intact. These simple recipes are a perfect antidote for those busy days when you are hard pressed for time and need something healthy and filling which can be thrown in just minutes.

This warm Chickpea and Veggie Salad falls in the same category. I defer to call this recipe just a simple salad, with Olive oil, mixed veggies, bread croutons, herbs, spices and protein packed chickpeas, this recipe makes a complete meal in itself. I could happily start and end my breakfastlunch and dinner with a bowl of this chickpea and veggie salad.

‘ If you truly love Nature, you will find beauty everywhere‘. ~ Van Gogh.  Early morning walk with my hubby is one activity I eagerly look forward to each day. Its a wonderful time I see some of the miracles of nature unfold as we walk along the narrow lanes and parks nearby.

The dim sky, the fresh morning air, quietness and the gentle pace of life is so enchanting.  The thumping of joggers zipping across, symphony of chirping birds, cling-cling of the milkman and the newspaper boys on cycle break the silence of nearly empty roads.

I have started appreciating these simple and small beauties of nature more and more after my new found love for photography. During one such walks I picked a few colorful leaves dressed in morning dew.

Inventions in modern day technology has reached to its pinnacle whereas I am still sitting at the bottom, hoping to catch hold of the tech dragon by its tail some day. But by the time I apprehend a little about how these applications work something new crops up and the former become obsolete. Alas, till date an Apple and a Blueberry continue to remain just plain fruits to this technology challenged mommy.

A moment that lasted an eternity.….It was a weekday when I got a call from the talented & inspiring co-author of two wonderful cook books Mrs. Pratibha Jain.  She invited me to be on the panel of judges along with some of the industry bigwigs and renowned chefs for a culinary event. The event is being conducted by a group of enthusiastic youngsters from Rajasthan in India, who are working towards many social causes in the city. I received my formal e-card invitation from the organizers and was given a warm welcome by the ladies wing chairman Navaneet and other members of the group.

Mom, make your Rajasthani Pasta today” Said my son enthusiastically. History repeats, I murmured to myself handing over the bowl of dough to both of them. Yes, I am a happy mom to see my children enjoy rolling these Dhoklis as we did in our childhood. They love to make shapes and faces with the dough and later struggle hard to search for their creations in the final recipe.

This soupy comfort food always reminds me of home & mom. I grew up eating Daal Dhokli which used to be our Sunday meal for as long as I remember. I still disagree and argue with my Gujrati friends who call the recipe a signature dish of Gujrat.

Mom being a working woman never got time to make special recipes on weekdays. Sunday was the only day when she cooked scrumptious lunches and comforting dinner. She would knead the dough and give it to me and my brother to roll the Dholiks, This was her way to keep us busy on Sundays and avoid fights between us. Television & computer come to existence much later in life. Blessing in disguise I must say 🙂

And I Walked Beyond My Dreams – Being a Food Stylist

Two phone calls and a few mails changed the entire perspective of my dream. And it was probably the first time ever that I truly appreciated these lines “Life is what happens to you while you’re busy making other plans.”

When I sit back and retrospect, I feel amazed by the pace at which life has moved forward since I planted the dream called Lite Bite. I really had no plans as to where my dream will take me to, I just loved chasing it.

Life is never easy for those who dream they say, I missed many golden moments of family fun, functions and precious sleep just to be in harmony with the on line world to sustain my dream.

A few weeks back hubby received a call in his office from someone enquiring about the food stylist for Lite Bite

Recipe | Vegetable Pasta in Wholewheat Flour White sauce – Its’ Healthy & Yum

Pasta, noodles, pies, pizzas…no, these are not the food that I could relate my childhood memories with. I was introduced to these food quite late in life. It was when I started to work, living independently and cooking on my own that I craved for eating out during weekends. And these carbohydrate and calorie loaded food were quite a stress buster and a good remedy to homesickness.

That was a phase I suppose, as now when we are in our forties both me and hubby prefer eating simple and light Indian food. But wait…this was only till our children grew and joined us on the dinner table! Now the menu in my kitchen often drifts from Indian to global on weekends as I surrender more often to the demands of my children who love these carb food. Times change or rather we change for the sake of our children. Now that both mom & dad don’t mind an occasional binge and dig into Pastas or have a bite or two of that cheesy Pizza just to be one with their kids 🙂
