Baked Brown Rice Paella – An Easy Indian version

Weekend dinner is a time when my family look forward to something exciting and delectable on our dinning table if we have no plans to eat out. The onus falls on me invariably 🙁 to think and cook something unusual and appetizing as well! And Paella (pi-AY-ya) an exotic rice dish from Spain, normally made with seafood and seasoned with saffron and other spices is selected for this weekend dinner menu. The recipe is quite easy to prepare and taste good with black olives. I could not get black Olives and made it with the veggies sitting in my refrigerator.

Party Menu – Easy Vegetable Fried Rice & Yogurt Raita

Vegetable fried rice with fresh yogurt Raita is what I count upon for a quick meal when unexpected guests arrive at home. There are countless ways this humble recipe can be prepared using various spice mixes and veggies to go in it. But my favorite is this simple recipe of fried rice cooked using Basmati rice, seasonal veggies and a few spices. For my mega party too, I chose the same recipe and it came out very flavorful and delicious. I served this vegetable rice with fresh Yogurt Raita.

A Healthy Wholewheat Veggie Pot Pie

Pot pie is a baked pie recipe, which is filled with loads of veggies and covered with whole-wheat or flaky pastry. Easy to make and healthy, these are a perfect and wholesome dish for the cold winter nights.

The top crust can be made flaky with refined flour or a bit dense and chewy with wholewheat. Since I like whole grain in my baking recipes, I baked this pot pie with whole-wheat pastry which was similar to a baked wheat biscuit texture.

Broccoli Manchurian – A Perfect Dinner Recipe

Broccoli Manchurian came to light when my kids refused to try this exotic vegetable with loads of health benefits. Just thought of adding Broccoli with the normal veggie Manchurian I often make, and voila 🙂 Broccoli has become a hot favorite veggie for my kids.

It is a good idea to introduce new veggies to kids at an early age with interesting yet healthy recipes, which they would enjoy eating and ask for more.

Don’t cook this cauliflower Madam, it has gone bad” was the reaction from my maid after looking at the pretty veggie Broccoli sitting on my chopping board! Yes, Broccoli is not indigenous to India and many are not familiar with this goldmine of nutrients.

The exotic and healthy veggie Broccoli is worth trying, and can be adapted to various forms of cooking and cuisines.

Veggies Made Easy – Ridge Gourd Sabzi

Ridge Guard is a beautiful climber which can adapt to any climate. A couple of these pretty climbers are growing majestically in the backyard of my house and they have reached the terrace of my house. The vegetable also called Taroi or Turai in Hindi, is a delight to watch on these pretty climber. I love to cook it often as it takes hardly 5-6 minutes to cook and is healthy too.

Don’t you leave the carrots… finish the greens, If you eat all the veggies in your plate you’ll get the ice-cream” Remember my mom struggling hard to include carrots, greens and other veggies in our diet. The cycle is repeated after 40 years and I find parroting the same golden lines to my kids 🙂
