Peas & More – A Few Fresh Pea Recipes with Spinach, Cottage Cheese and Spices

A recent visit by a friend from a near by hill station, made me rich with piles of farm fresh mountain vegetables, yes these tender, young and juicy organic veggies are no less than a treasure. I could not control myself but to munch upon the crunchy carrots, cucumber and the lovely green pods filled with sweet little peas. One of my favorite snacks of all time I could spend hours together with a bucketful of fresh peas..press..open..pluck..plop..and repeat 🙂 But alas, these veggies are a far cry in big cities, all I get here is lifeless, limp and tasteless vegetables.

Rice Made Easy – Four Spicy & Flavorful Quick Rice Recipes

I like how versatile this humble grain Rice could be in various forms of cuisines world over. From more exotic Sushi to Risotto to the simple curd rice from South India, this ancient grain has come a long way. Though I am not a rice loving person, having married in a place where every day starts with rice and ends with it made me reinvent some of the very famous rice recipes here. Now my menu boasts of many easy to make and scrumptious rice recipes I learned from my MIL and friends here.

Peanut Butter Stuffed Okra and Ridge Gourd

With the summer vacation coming to an end and the children gearing up for the school, the days are going to be more hectic and short. Gone are the days of late night outings and no wake up calls in the mornings. Hitler rule prevails again 🙂 Need a good revision of lunch box recipes to be packed to school for the kids.

Okra and potatoes being the two most favorite veggies for my kids are often packed with Indian flat breads along with a fruit or fruit juice. The one recipe which wins hands down for my son’s lunchbox is this Peanut butter stuffed Okra.

A Few Healthy Salad Recipes in Your Platter to Chill out in Summer!

When summer is here, how can Salads be far! Chilled and colorful Salads become a staple food for me during the sultry hot summer months. Nothing can be as refreshing and nourishing than a bowl of fresh salad with a perfect dressing to match with. And salads become wholesome if there is a hint of wholegrain, lentils and vegetables in it. If you get to know the correct formula for making the salad dressing than you have won half the battle, rest is just selection, mixing and serving the salad.

I posted a few salad dressings which I often use to pep up my salads. These are easy to make and can be stored for a few days in refrigerator. Selection of vegetable depends upon the place you live, as I don’t get many exotic veggies that are commonly used in an English or a French salad. But I make do with my indigenous veggies and, believe me, they taste heavenly. Moreover salads are the only recipe which does not require preset rule just as baking or any other forms of cooking. You just need to select your veggies, make dressing of your choice and Voila’! – you are done with your recipe 🙂 You can always adjust the dressing and the veggies according to your taste.

A Bread, a Brownie and Wonderful Zucchini All The Way!

Sometimes simple things in life can bring in windfall gains and mine came through the wonderful vegetable Zucchini I bought this weekend. Yes, this small veggie got transformed into three different delectable dishes for my family last Sunday. A bread, a brownie and a few pancakes. Thought of posting all together but then restrained myself doing the same, as the post will become too long and will be difficult to categorize all. So here are the two Zucchini delights for you to indulge in…a bread and a brownie. Don’t miss out on the easy & quick breakfast of Zucchini savory pancakes.

The plain Zucchini bread with no other flavors and very less of sugar tasted very good and was liked by me and my hubby. The chocolate in the brownies marred the flavors and taste of the veggie but anyway became a hit with my kids 🙂

Baked Brown Rice Paella – An Easy Indian version

Weekend dinner is a time when my family look forward to something exciting and delectable on our dinning table if we have no plans to eat out. The onus falls on me invariably 🙁 to think and cook something unusual and appetizing as well! And Paella (pi-AY-ya) an exotic rice dish from Spain, normally made with seafood and seasoned with saffron and other spices is selected for this weekend dinner menu. The recipe is quite easy to prepare and taste good with black olives. I could not get black Olives and made it with the veggies sitting in my refrigerator.

Party Menu – Easy Vegetable Fried Rice & Yogurt Raita

Vegetable fried rice with fresh yogurt Raita is what I count upon for a quick meal when unexpected guests arrive at home. There are countless ways this humble recipe can be prepared using various spice mixes and veggies to go in it. But my favorite is this simple recipe of fried rice cooked using Basmati rice, seasonal veggies and a few spices. For my mega party too, I chose the same recipe and it came out very flavorful and delicious. I served this vegetable rice with fresh Yogurt Raita.
