Every travel leaves you with some unforgettable travel experiences you would want to treasure for ever. And what better way to freeze those precious moments than writing a bogpost and reflecting on your travel time with family and friends.
“We have a marriage invitation from my colleague in Metur city this weekend. Do your Google search and let me know if there are any good places nearby worth visiting.” Hubby informed me from his office last week and cut the line.
A few Google searches and I liked this small hill station Yercaud in Salem district which is located in the Shevaroys range of hills in the Eastern ghats of India.
But wait…there is more….
There are a few moments in life when you are truly & completely happy. My yearly visit to hometown in Udaipur, Rajasthan is one such occasion when I wish I could stop the time and live in those moments forever. Though many old familiar houses have given way to high rise apartments now and there are very few familiar faces to greet, but every visit is worth preserving the childhood experiences and keeping them afresh…..from authentic Daal Baatis to exotic Gatte ki subji filled with nuts and dried fruits…they leave no stone unturned to pamper me with their love and let me indulge in my favorite food.

“So you are a housewife and you blog at your free time, lucky you” I am still trying to figure out what the young blogger wanted to convey when we met in a blogger meet recently. Am I lucky because I am a housewife, a blogger or because I have extra free time?
To me ‘Time’ is a luxury if you are bound with responsibilities and also have a passion to follow. I feel that only the achievers know the secrets of how to tame this elusive element of life called ‘Time’ and make the most out of both the worlds.

Creativity has no boundaries and is best expressed when the mind is free and the world is your canvas to work upon. For the last couple of days South Indian cinema and politics is abuzz with a certain ban on the release of a Tamil movie. Though I don’t follow the happenings from the field of cinema or politics much, but this one caught my eyes. People in the shops, morning walkers, school children, my maid and not to forget the screaming TV channel anchors, everyone seems to be worried about the freedom of expression overnight.
Anyways, hope both the sides resolve the issue amicably soon and the freedom of an artist to express art without any boundaries or political pressure is restored and also the powers of politicians to bring in peace and justice are appreciated.

My knowledge about Middle Eastern cuisine is very limited, its either a creamy Hummus, spicy Kebabs, handy falafel sandwich or a luscious Baklava. I always think that there is not much scope for a vegetarian to venture into the same. But the past couple of years of food blogging changed my perspective of food and I now enjoy cooking & eating out of my comfort zone.
Sometime in July 2012 when a dear food blogger friend Faith from Edible Mosaic mailed me that she is in the process of publishing her cook book and asked me if I would be interested to review her book. I was excited for her new venture and felt honored to be a part of her world of dreams. A wonderful friend who was the very first AFBLHS guest on Lite Bite and is a great support from the my early days of blogging.

After years of endless cooking and constant blogging, hubby declared that I am serious about my work! And finally I get a new toy to play with and Lite Bite goes digital. Whats more is that this sophisticated gadget as a gift is combined with my 43rd birthday. He is one happy lot now-a-days, for he escaped buying a separate gift for me and is temporarily relieved from his nagging wife who henceforth will be busy dabbling with her new found love (so says he).
As if PHP’s and HTML’s were not enough to break my head, learning photography, composition, lighting, food styling and all is giving me sleepless nights, all for the love of blogging. Have been bugging friends, reading manuals and online journals like a zombie to get comfortable with my camera. But then as I read somewhere ‘ Develop a passion for learning. The vast open Saffron fields in Jammu is worth a visit for any traveler in India. I was amazed to see these tiny plants with no prominent shoots and leaves, but just large bright violet flowers with crimson colored stigma or saffron as the main plant body. Acres of farm land could yield just a few grams of Saffron. No doubt the hard work that goes in cultivating Saffron makes this spice rare & pricey.
In India Saffron or Kesar as is called in Hindi, is extensively used in making milk based desserts and for cooking aromatic basmati rice Biryani. Though I don’t use saffron in my bakes, these popular Indian saffron cookies - Nankhatai are my favorite.
Versatile dips & spreads which could be made quickly and peps up a meal instantly are my all time favorite. Ubiquitous green chutney with fresh coriander & mint leaves in my refrigerator tops the chart by all means. Yes, I eat it with my flat breads, use as sandwich spread, on crackers, tarts, Khatti rolls, pizza topping…and so on.. Hummus is one another favorite of mine, a refreshing & healthy dip prepared with chickpeas or Garbanzo beans. The recipe is often twisted & tweaked to come up with yummy surprises..well..almost always
Pasta, noodles, pies, pizzas…no, these are not the food that I could relate my childhood memories with. I was introduced to these food quite late in life. It was when I started to work, living independently and cooking on my own that I craved for eating out during weekends. And these carbohydrate and calorie loaded food were quite a stress buster and a good remedy to homesickness.
That was a phase I suppose, as now when we are in our forties both me and hubby prefer eating simple and light Indian food. But wait…this was only till our children grew and joined us on the dinner table! Now the menu in my kitchen often drifts from Indian to global on weekends as I surrender more often to the demands of my children who love these carb food. Times change or rather we change for the sake of our children. Now that both mom & dad don’t mind an occasional binge and dig into Pastas or have a bite or two of that cheesy Pizza just to be one with their kids

Do you follow any particular recipe for making pilaf/pulav? I am afraid I don’t… If there is ample time and the cooking is for some special guests, my Pilaf will have a mix of home ground spices and some exotic ingredients such as poppy seeds, coconut & cashew paste. On a normal day it’s just a few whole spices, veggies, fluffy Basmati rice and my quick aromatic pilaf. And how versatile & flexible a recipe could get, you don’t need to follow any particular recipe and yet come out with some extraordinary results, yes such is the magic of Pilaf!
My favorite is always this simple and quick Pilaf or Pulav recipe, wherein the subtle flavors of Basmati rice, a mild punch of few whole spices and the real taste of fresh veggies could be enjoyed in best form.
