Grilled Cottage Cheese, Soya Chunks and Veggies in Spicy Yogurt – A Perfect Appetizer

Grilling is probably one of the best way to enjoy a whole lot of veggies which I find it difficult to use in my normal day Indian recipes. I often use cottage cheese and Tofu in many of my recipes but cherry tomatoes and colored capsicum find its place in salads only. And eating soya nuggets and raw capsicum in salads is a big ‘No’ for my children with the exception of these Kebabs which is their favorite snack.

Banana, Oatmeal & Wholewheat Bread – A Healthy Breakfast Loaf

On any normal day my freezer stock more overripe and blackened bananas than ice cubes, more so because I like baking with bananas and love banana smoothies as a filling breakfast treat and always end up buying extra for the same. This Eggless Banana & Oatmeal Wholewheat Bread was yet another extremely moist and delightful bake for our Sunday breakfast. Since I did not get time to de frost the banana in the morning, I grated the banana and was happy to see a fluffy and evenly baked bread. Grated frozen banana did the magic here!

Grilled Cottage Cheese & Soya Nugget Kebabs – A Delightful Appetizer

Summer vacations for children and my kitchen counter is all strewn up with chocolate shavings, marshmallow bits, cookie cutters and all that excite their fancy. My mommy cap is on to create special dishes to please the children and also keep them interested in eating food which is healthy and scrumptious as well. Food which should be exciting enough to make them forget the cravings for the junk foods they always love to have given a chance. These grilled cottage cheese and soya nuggets kebabs proved to be a right choice for a great weekend. Crisp, healthy and a great munchy recipe to snack upon while playing a favorite board game together in the hot wheather.

Steamed Spinach Dumpling – An Appetizer and A Yougurt Delicacy

Every time I make this Spinach and yogurt delicacy, it brings back the memory of my grandmother and her earthy kitchen. I would have cooked the same recipe umpteen number of times but could never come close to the one which she used to make. The earthen pot, fire wood stove, yogurt made from the fresh milk from backyard and those experienced hands are the secret ingredients which brings the flavors missing in mine 🙂 My gas stove and the stainless steel vessels could never emulate the same lest I shift to the olden days of cooking.

Baked Spinach Balls – An Appetizing Starter and a Scrumptious Healthy Snack

“The other bunch is free with the one you bought” said the vendor after watching the amused looks on my face. “No one buys these greens here, and I want to empty my cart madam” he continued. Yes Spinach is not a very common sight in many kitchens of South India…good for me, I got my bounty 😉  But then after coming home I was perplexed about how should I make use of these huge piles of lovely greens strewed all over my dinning table!  Palak paneer was surely not in my list, neither was the spinach chapattis which my family is now bored of eating.

The whole of last week went on a spinach bonanza…baking, curries and smoothies..have tried more and enough with these greens in my kitchen. These starters is one such experiment, and if you are a spinach lover then this is a must try for you too. These no-oil Spinach ball starters, soft from inside and crisp on the outside is so simple to make, never new Spinach could give me a winner recipe 🙂

Easy Zucchini Pancakes – A Savory Breakfast

A Zucchini Sunday! Yes the weekend was dedicated to this summer squash and its delicacies. Baked a Zucchini bread, a brownie and savory pancakes with my Zucchini. These Zucchini pancakes are quite easy and quick to make and can be a delightful breakfast.

Healthy Breakfast On the go – Mighty Sandwiches

During weekdays with hectic school schedule and busy office routine, breakfast is the only effective meal time when I can stuff my kids and hubby with all the goodness of veggies, fruits, nuts and cereals.

Over the years I have experimented with various breakfast recipes liked by my family and which also give me ample time in the morning rush hours besides providing them with good nutrition. And Vegetable Sandwich is one such recipe I count upon.

Healthy Granola Bars for Kids
