Cornmeal is a staple food in many parts of Rajasthan in India and is adapted in many forms of delectable meals. Cornmeal chapattis or Makki Ki Roti as called in Hindi, a crisp and delicious Indian flat bread is an integral part of daily bread in may houses. Cornmeal Porridge, desserts and even sweets are made with cornmeal as the main ingredient.
This cake is very light, easy to bake and is not too sweet.

Risotto-a warm Italian rice recipe is a perfect dish for the winter season. Slow cooked in vegetable broth, cheese, veggies and butter this makes a delicious main course. The method of cooking and the rice variety used is what makes Risotto somewhat different from some common rice dishes such as fried rice, pilaf or pulav.
The creamy texture of Risotto comes with the special variety of rice used to make it, and the slow cooking to release the starch from the rice.The Risotto should be served in a flat plate and should be eaten within few minutes of serving; else it can become too dry.

The rich and heavy traditional Steamed Christmas Pudding or cake is a delicacy hard to resist. The long hours of steaming are intimidating, but the wait is worth a million.
The heady aromas of flavorful spices, exotic nuts, dried fruits, brandy, and fruit juices make this steamed Christmas cake almost irresistible. Quite easy to make, this egg less steamed cake can be stored in a cool dry place for several weeks or even months. Wish I could also store it for a few days, let alone weeks and months and devour the infused flavors of the spices in it. Alas.. every time I make this pudding, it goes to the Hall of fame the very same day

Pot pie is a baked pie recipe, which is filled with loads of veggies and covered with whole-wheat or flaky pastry. Easy to make and healthy, these are a perfect and wholesome dish for the cold winter nights.
The top crust can be made flaky with refined flour or a bit dense and chewy with wholewheat. Since I like whole grain in my baking recipes, I baked this pot pie with whole-wheat pastry which was similar to a baked wheat biscuit texture.

Drop cookies are my favorite and for sure some of the easiest goodies to bake. With no kneading, meddling with rolling pins, cookie cutters, refrigerating the dough, these are an absolute hassle free baked delights. Drop cookies have soft & chewy center unlike the normal brittle and crisp rolled out cookies. The dough for the recipe to make these cookies is slightly soft and can be dropped on the baking sheets directly with a spoon.

Wheat Germ is one among the precious food ingredients which often fight for a place in my refrigerator. Blueberries, black current, prunes are some of the few contenders. Since getting these exotic foods is difficult here, I normally buy them in large quantities whenever I get a chance to do so.
I dry roast these Wheat germs and store them in a zip lock inside the refrigerator. These then get into my baking, porridge, chapattis, chutneys and various other recipes. Wheat germ gives a beautiful nutty flavor to the dishes.

What better than a light and healthy dessert after a scrumptious meal. This strawberry flavored Cottage Cheese Cake falls in the same category and makes a perfect dessert for my family most of the times. The fact that this recipe is egg less, no gelatin and no cream bake, unlike the normal cheese cakes which are cream based or use condensed milk, makes it a healthier version too.
