Cinnamon rolls – A Healthy Twist with Palm Sugar, honey and walnuts

Cinnamon rolls are a very common breakfast feast in many European counties. A soft and flavorful yeast bun/roll I would love to munch upon any time of the day. Though the lazy & the busy will find it a bit tough nut to crack, which includes me too 🙂 As the resting hours are really intimidating and test your patience levels to the full! But the end results are sure to make you ecstatic.

To make these cinnamon rolls loaded with nutrients I added Palm sugar instead of the regular white sugar. Honey, walnuts, cinnamon and wholewheat are the other contestants fighting for their place in the health chart of these cinnamon rolls. Palm sugar gave a very caramelized and lovely flavors to the rolls.

Eggless vanilla cake with fruit custard – A Delightful Dessert for your Valentine

Red roses, Cupid, winged cherubs, heart cakes, heart here and heart there…young men and women make merry on this day and so does the salesmen! But just one day may not be enough to show our love, we should be ready to express our love the other 364 days too. What ever may be the reason behind celebrating this lovely day, make the most out of it and wish that each day of year is another Valentine day filled with unbound love in each heart.

And to express true love an expensive gift is not necessary. A cute red rose, a small hug, a few words of appreciation and even cooking something which is liked by your loved ones can do the trick. And I baked this light and extremely delightful dessert Vanilla Cake with Fruit Custard for all whom I love. Yes it includes you too, who are reading my post right now 🙂

Baked Brown Rice Paella – An Easy Indian version

Weekend dinner is a time when my family look forward to something exciting and delectable on our dinning table if we have no plans to eat out. The onus falls on me invariably 🙁 to think and cook something unusual and appetizing as well! And Paella (pi-AY-ya) an exotic rice dish from Spain, normally made with seafood and seasoned with saffron and other spices is selected for this weekend dinner menu. The recipe is quite easy to prepare and taste good with black olives. I could not get black Olives and made it with the veggies sitting in my refrigerator.

Easy Eggless Kiwi Fruit Muffins for a Change

These unusual looking fruit never caught my fancy till I first saw the skinned and sliced Kiwi fruit! Beauty wrapped in a dirty gift wrap.. Many still brush them aside as a potato with a weird hairdo or a Chikoo fruit gone berserk 🙂

I am in love with these tiny exotica packed with more vitamin C than our humble orange! Barring the ugly exterior the fruit is extremely beautiful and quite dramatic from inside. Speckled with tiny black & crunchy seeds and a color which will put any paint company go insane!

Easy & Eggless Almond Meal & Oats Cookies

Make hay when the sun shines’ And I did the same with the surplus almond meal I had. Baked almond & Oats cookies with it 🙂 with the extra almond flour left after my first stint with the macarons . And I am in love with these healthy, chewy and nutty cute cookies with my hot chocolate drink in morning breakfast.

A Refreshing Yogurt & Strawberry Dessert

There is nothing special in this dessert except the fact that I wanted to try my hands on Macarons. I do lots of baking but mine is restricted to just cakes, muffins, cookies and bread. Never got inclined to baking anything lying outside my territory. The pretty & colorful Macarons posted in many fellow bloggers got me attracted.

Party Menu- Recipe Planner for the Big Day

It is that time of the year again we anxiously look forward to each year. Yes, time when we celebrate the combined birthday dinner party for our kids, which has become a sort of ritual for the last 10 years. Though with age catching up fast, it is becoming a bit taxing to entertain a guest list of 80+ friends. The happiness written on the faces of our children fuel our energy and helps us do the same year after year 🙂 And for sure these are some of the most wonderful moments of our life!

Party Menu – Chocolate & Strawberry Cakes

A Birthday party is incomplete with a Cake, and mine too had chocolate and Strawberry flavored cakes. Chocolate cake for the son and the strawberry cake for the daughter. Baked 4 cakes a day before the party and did the icing part on the final day of the party.

Party Menu – Easy Vegetable Fried Rice & Yogurt Raita

Vegetable fried rice with fresh yogurt Raita is what I count upon for a quick meal when unexpected guests arrive at home. There are countless ways this humble recipe can be prepared using various spice mixes and veggies to go in it. But my favorite is this simple recipe of fried rice cooked using Basmati rice, seasonal veggies and a few spices. For my mega party too, I chose the same recipe and it came out very flavorful and delicious. I served this vegetable rice with fresh Yogurt Raita.
