And then came the moment we all were waiting for. I almost held my breath and didn’t move a bit when my children took their first bite. They ate, looked at me and gave a mysterious smile which peaked my curiosity :)

I could not make out the taste when I scooped my first bite into Avocado Chocolate Mousse, but with the second bite I was instantly transformed into chocolaty haven. The rich, creamy and buttery taste of Avocado mousse seduced me into taking one bite and then another, till I was scraping the corners and reached the bottom of my ramekin.

The no-cook, easy and quick Avocado mousse taste exactly like how I expect my dessert to be. Food is the most delicious expression of emotions.

There is nothing more admirable than when you see your work getting recognized in your own homeland, all the more so, when you are staying away from it. But as they say, we may leave a house or a town, but that does not mean those places leave us.

Whenever I miss my hometown in Udaipur, I would sneak into this online News portal ‘Udaipur Times’ for hourly updates and latest happenings in my town. But never thought that some day I will make ‘News’ in the same.

And just when I was sitting back and reminiscing about what all good the year 2013 has brought in for me, I got yet another pleasant surprise. I found my name in the list of “Top 30 Indian Food Bloggers of 2013, first on Awesome Cuisine and then on Rediff.com, a very trendy online web portal.

I couldn’t have asked for anything better. These are times when I take pride in what ever I have achieved and feel thankful for the choices I have made in life.

We have an invite for ‘R’ s 20th marriage anniversary tomorrow. It will be a small gathering of about six families, please decide upon some useful gift for the couple.” Said hubby and disconnected the phone.

Hmm….time to catch up with some old friends after a long gap….good that I always have a few sets of useful kitchenware, books and similar stuffs in store for such unexpected invites, when I don’t have time to go out and shop.

I picked up a beautiful light brown ceramic set of 6 coffee mugs I bought last year from Pondicherry and wrapped in a purple cover laced with small flowers and dots.

Life was much easier when Apple and Blackberry were just fruits‘. Inventions in modern day technology has reached to its pinnacle whereas I am still sitting at the bottom, hoping to catch hold of the tech dragon by its tail some day. But by the time I apprehend a little about how these applications work something new crops up and the former become obsolete. Alas, till date an Apple and a Blueberry continue to remain just plain fruits to this technology challenged mommy.

Life is full of surprises. Just say ‘never’ and you’ll see.’ I did say ‘never’ to this Samsung Notebook after posting my entry for a recipe contest by Del Monte. And today when I open the parcel marked with ‘Winner - 1st Prize’ I understand that it takes more than just magic to make any dream a reality. These are the moments when all those unseen tiny efforts you put in to keep your passion alive seems worthwhile.  Thanks Del Monte and IndiBlogger for making it happen! The winning recipe a  No-Bake Chocolate Brownie is an easy treat you can make well ahead of time during festive season.

Some news travel faster than lightening. I found myself standing near my oven, baking goodies for friends way before the feeling of winning this pretty Notebook could sink in :)

Baking | No- Bake Fruit & Nuts Chocolate Brownie – Quick, Easy and Healthy Treat

So much chocolate. So little time‘! Yes, that’s what my children say whenever there is a chocolate dessert on their menu. Wish they said the same for studies also. I often take advantage of their chocolate love by sneaking in healthy foods which in its normal form are non acceptable. Oats, peanuts, almonds, dates, prunes and the list is endless. Most of the recipes on Lite Bite revolve around my endeavor to find out ways to make the food kids friendly, more healthy and also taste scrumptious at the same time.

Baking | Two Healthy  Eggless Chickpea Flour Cookies – Chocolate and Cardamom Flavoured

The rustic iron Wok which was abandoned long back sits pretty in the backyard of my mom’s place after the entry of  that swanky oven in her kitchen. This black heavy-bottom wrought iron wok has been a part of our childhood memories for long. The melt-in-mouth cookiesNaan Khatais, Baatis and sort of spongy cakes she baked in it makes this ‘wok’ an important  part of our growing years.

These Chickpea flour (besan) cookies were the most baked goodies in our indigenous oven. Half of the wok was permanently filled with sand and a thin aluminum plate served as the baking tray to bake.

Recipe | No-Bake Nutty Chocolate Biscuit Cake – Easy as Can be

If there is no chocolate in heaven, I am not going‘  ~ Jane Seabrook   Oh no I am not jumping in the bandwagon of chocoholics. I enjoy my celibacy with chocolates barring a few occasional indulgences now and then. And given a choice between different flavors it is vanilla for me.

Anything tastes good if it has chocolate in it” says my little princess as a matter of fact.  No doubt that this luscious, gooey and seductive food is defined as world’s perfect food by many. A tiny bar of chocolate can save many bad days and meals at home.
I used half of the pack by rolling out the chocolate Truffles and made this no-bake nutty chocolate cake with the rest. Thanks to my friend now I shop for more of these ‘once upon a time disdained’ cookies ;-)

All good things in life are simple and I feel that it is our expectations and desire to get more from it makes it complex. The junk food addiction, chopping down trees endlessly to make paper marooning animals of their habitats, plastic menace….we are moving from simple ways of living to the more complex world. And to think of it, the idea of wrapping around leaves and eating apples straight from the tree as done by our ancestors could solve many a problems of modern day living ;-)

A fresh fruit in its natural form is my kind of dessert any day and given a choice I would love to serve a plate of fresh fruits to my guests as well to end a meal. “This is not a dessert we will expect from the author of a food blog” is the answer to my query from my guests most of the time.

You know your children are growing when you start getting gifts from them. I was pleasantly surprised this year when I received a beautiful card and a precious gift from my children. Oh..well, they did give a hint that both shared equal amount from their piggy bank for the same, you smart a… I know, a quick re-fill is needed.

Something left for me in your bank or you spent all your love and money on mom, my birthday is round the corner” asked hubby, staring lovingly at the kids waiting for their confirmation. Sniff..sniff..I smell  something burning ;-)
