On a normal day my cooking starts with the main dish and then clubbing the same with the accompaniments according to the taste and cuisine. But there are times I cook in reverse gear too ๐ that is to plan for the accompaniment first and then look out for the main dish to go along with it. This scrumptious Italian bread Focaccia is one such recipe I planned & baked after my whole lentil and mint soup was ready. Quite easy to bake this loaf was my obvious choice, since it takes less rising time than any other yeast breads. And having grape tomatoes in hand added the extra zing to the final baked loaf.

As soon as I saw the Daring Baker’ challenge I knew that I may not be able to take it this time, reason being the meringue which is the main ingredient for baking this lovely cake. Since I do not use eggs in my baking and meringue calls for the same I left the challenge feeling sad not being able to complete it. But after seeing the lovely posts on the DB with these baked goodies I could not resist myself and baked the same cake using chocolate and cream mix.

“The other bunch is free with the one you bought” said the vendor after watching the amused looks on my face. “No one buys these greens here, and I want to empty my cart madam” he continued. Yes Spinach is not a very common sight in many kitchens of South India…good for me, I got my bounty ๐ ย But then after coming home I was perplexed about how should I make use of these huge piles of lovely greens strewed all over my dinning table! ย Palak paneer was surely not in my list, neither was the spinach chapattis which my family is now bored of eating.
The whole of last week went on a spinach bonanza…baking, curries and smoothies..have tried more and enough with these greens in my kitchen. These starters is one such experiment, and if you are a spinach lover then this is a must try for you too. These no-oil Spinach ball starters, soft from inside and crisp on the outside is so simple to make, never new Spinach could give me a winner recipe ๐

Sometimes simple things in life can bring in windfall gains and mine came through the wonderful vegetable Zucchini I bought this weekend. Yes, this small veggie got transformed into three different delectable dishes for my family last Sunday. A bread, a brownie and a few pancakes. Thought of posting all together but then restrained myself doing the same, as the post will become too long and will be difficult to categorize all. The plain Zucchini bread with no other flavors and very less of sugar tasted very good and was liked by me and my hubby. The chocolate in the brownies marred the flavors and taste of the veggie but anyway became a hit with my kids ๐

Cinnamon rolls are a very common breakfast feast in many European counties. A soft and flavorful yeast bun/roll I would love to munch upon any time of the day. Though the lazy & the busy will find it a bit tough nut to crack, which includes me too ๐ As the resting hours are really intimidating and test your patience levels to the full! But the end results are sure to make you ecstatic.
To make these cinnamon rolls loaded with nutrients I added Palm sugar instead of the regular white sugar. Honey, walnuts, cinnamon and wholewheat are the other contestants fighting for their place in the health chart of these cinnamon rolls. Palm sugar gave a very caramelized and lovely flavors to the rolls.

During weekdays with hectic school schedule and busy office routine, breakfast is the only effective meal time when I can stuff my kids and hubby with all the goodness of veggies, fruits, nuts and cereals.
Over the years I have experimented with various breakfast recipes liked by my family and which also give me ample time in the morning rush hours besides providing them with good nutrition. And Vegetable Sandwich is one such recipe I count upon.

It is that time of the year again we anxiously look forward to each year. Yes, time when we celebrate the combined birthday dinner party for our kids, which has become a sort of ritual for the last 10 years. Though with age catching up fast, it is becoming a bit taxing to entertain a guest list of 80+ friends. The happiness written on the faces of our children fuel our energy and helps us do the same year after year ๐ And for sure these are some of the most wonderful moments of our life!

When I think of a street food which is healthy too, Pav Bhaji wins hands down! Yes, with loads of veggies sitting pretty on the plates of my kids with a smile on their faces, is what gets the crown for this humble dish called Pav Bhaji. This surely is a great recipe to sneak in all those veggies into your kids menu which are abundant from their science dictionary. And I don’t forget to add pumpkin in my Pav Bhaji recipe..shh they are out to play ๐
