Easy Strawberry Drop Cookies

Drop cookies are my favorite and for sure some of the easiest goodies to bake. With no kneading, meddling with rolling pins, cookie cutters, refrigerating the dough, these are an absolute hassle free baked delights. Drop cookies have soft & chewy center unlike the normal brittle and crisp rolled out cookies.  The dough for the recipe to make these cookies is slightly soft and can be dropped on the baking sheets directly with a spoon.

These egg less Strawberry Drop Cookies are perfect for pepping up a dull weekend, and with wholewheat and fresh fruits these are a real health bonanza. A treat when you have a desire to indulge in good food but are too lazy to make or bake 🙂

Eggless Strwberry Drop Cookies

Crushed Strawberries

Ingredients;

  • 1/2 cup of Whole-wheat flour
  • 1 cup of All purpose flour
  • 1/2 cup of crushed fresh Strawberries
  • 1/2 tsp. Baking soda
  • 1 tsp. Baking powder
  • 1/2 cup Butter/oil
  • 2 tbsp. milk

For Frosting:

Melted Chocolate

Eggless Strwberry Drop Cookies

Method: Clean the strawberries and crush them with a fork. You can puree the strawberries if you wish. I like the small chunks of fruits in my cookies. If you are using butter, bring it to the room temperature till it is soft.

Take both the flours in a large vessel and add baking powder and baking soda into it. Sift all the dry ingredients together.

Add the melted butter or oil in the flour mix and stir it thoroughly. Pour the milk and crushed strawberries in it and stir it lightly.

The resultant dough should be soft and creamy texture. At this stage you can directly put a spoonful each of the batter on a baking tray or fill it in a piping bag.

I filled the soft batter or dough into a piping bag with star nosal. Grease a baking sheet (butter paper) and put it on a baking tray.

Drop the cookies from the filled piping bag on the baking sheets leaving small gaps in between the cookies.

Bake the Strawberry drop cookies for about 12-13 minutes at 190 degrees. The color changes from pink to dull purple after baking. The heady aroma of strawberries emanating from the oven is irresistible.

Decorate the cookies with any frosting of your choice, or just spread some fruit jam, Nutella spread or melted chocolate as I did in the picture over the Strawberry drop cookies and indulge in.

Notes;

  1. Bake them for further 10-12 minutes to get crisp and crunchy Strawberry cookies.
  2. Spread chocolate frosting on one drop cookie and cover with another to make a sandwich cookie.
