Veggies Made Easy – Simple Okra Recipe

Okra or Ladies finger is one of my favorites in vegetables. I like to cook it the most simple way to get the taste and flavors of the veggie. This simple okra recipe is the most basic, quick and require very few ingredients to go. Makes a healthy lunchbox option.

Ingredients;

(makes 2 servings)

  • 200 gms Okra or ladies finger
  • 1 onion
  • 1 tsp red chilly powder
  • 1/4 tsp turmeric powder
  • 1 tsp coriander powder
  • 1/2 tsp cumin seeds powder (optional)
  • salt as desired
  • 4 tsp oil
  • a pinch of asafoetida

Method: Wash the vegetable and wipe it dry using a kitchen napkin. Discard a small portion of  both the ends of the vegetable.  Slice the okra in bite size pieces. Peel the onion and dice finely.

Heat oil in a wok and crackle the mustard seeds. Add onion and all the dry spices in it, fry it for 2 minute. Add the sliced ochra in it and cook for 5-7 minutes without lid.

Serve hot with chapattis or as an accompaniment to rice dishes.  Fill it in a coked chapatti and make handy and healthy wraps.
