A Zucchini Sunday! Yes the weekend was dedicated to this summer squash and its delicacies. Baked a Zucchini bread, a brownie and savory pancakes with my Zucchini. These Zucchini pancakes are quite easy and quick to make and can be a delightful breakfast.

Pancake is a weekend breakfast at my home. And I often get worked up thinking new ideas and innovative ways to bring different flavors and taste to pancakes. This time I tried adding Ragi, Finger Millet to my Pancake batter just to add extra bit of nutrition to the breakfast. And I was surprised when my 6 years old daughter enjoyed and finished it without any complain 🙂

The lunch options I select for my kids are very simple & easy to cook, keeping their daily recommended doses of nutrition always. Rest assured I get empty lunch-boxes and a satisfied kid each day from the school.
Idea for the colourful coins stemmed up from my 5 years old daughter, a very fussy & slow eater. She asked me to pack lunches not more than a coin’ size ! That is when I started reducing every possible food to the size of a coin. Colourful coin is one such attempt. Though small in size, it is power packed with nutrients and energy to keep the kids going for long during the rigorous school hours. The coins add up as great party starters too.

Pancakes are a delicious way to start your weekend mornings. You can prepare the batter and refrigerate for upto 3-4 days for later use. Include whole flour of various wholegrain such as wheat, brown rice, ragi, millet, jowar to make the pancakes for more health benefits. One such recipe using wholewheat flour goes like this;

Whether it is a modern day Pancake a sandwich or a traditional chila, theplas, upma, parathas, or Idly...breakfast is my favorite meal of the day. You can be so creative with these breakfast recipes. But wait..on most of the week days, I can only dream of all these delicacies. When my day begins at 5.30 early morning and ends around 11 in night, cooking an elaborate meal is a far cry.
Sunday is the day when I can afford to do things differently. Come Sunday and you can even find a traditional Khamani with sev or a contemporary French toast with fruit compote and a fresh fruit & vegetable juice on our breakfast table.

I was delighted to find a new organic store opened close to my house loaded with many unusual food products I would love to cook with. I bought a few packets of red Sorghum (jowar) and sweet smelling pure cane sugar or as they call it sucanat (sugar cane natural).
The red Sorghum has harder skin and more nutty taste than the white grain and takes a little longer to cook.

It has been 7 years already and the kind of euphoria that Lite Bite is creating, year after year is beyond words.
Lately I have been so wrapped up in constant outdoor photo-shoots and family commitments that this online baby is completely neglected.
But then, it never ceases to surprise me any less. Lite Bite is listed in the ‘Indian Top Blog’ List‘ of 2015  yet again….some good online karmas I suppose 🙂
