Baking | No- Bake Fruit & Nuts Chocolate Brownie – Quick, Easy and Healthy Treat

So much chocolate. So little time‘! Yes, that’s what my children say whenever there is a chocolate dessert on their menu. Wish they said the same for studies also. I often take advantage of their chocolate love by sneaking in healthy foods which in its normal form are non acceptable. Oats, peanuts, almonds, dates, prunes and the list is endless. Most of the recipes on Lite Bite revolve around my endeavor to find out ways to make the food kids friendly, more healthy and also taste scrumptious at the same time.

Baking | Two Healthy  Eggless Chickpea Flour Cookies – Chocolate and Cardamom Flavoured

The rustic iron Wok which was abandoned long back sits pretty in the backyard of my mom’s place after the entry of  that swanky oven in her kitchen. This black heavy-bottom wrought iron wok has been a part of our childhood memories for long. The melt-in-mouth cookiesNaan Khatais, Baatis and sort of spongy cakes she baked in it makes this ‘wok’ an important  part of our growing years.

These Chickpea flour (besan) cookies were the most baked goodies in our indigenous oven. Half of the wok was permanently filled with sand and a thin aluminum plate served as the baking tray to bake.

Simple & Quick Kidney Beans in Tomato Gravy – Scrumptious Rajma

Rajma-rice, a plateful of sliced onion in vinegar, a few books in hand, hot debate on current topics and our dinner would be over in no time. This was the regular evening routine for a bunch of close friends during the college days we spent together away from our homes in Delhi, hardly missing out on homely food. We would stop by that open Dhaba (makeshift restaurant) with a very few chairs spread under a tree and wait for our piping hot plate of Rajma-rice served by this rugged looking pot bellied man who cooked & served the same meal throughout the year. At times he served us Rajma with Naan and a dessert which looked like cooked rice in sugar syrup during festivals to make sure we remain his loyal customers. Must say that I have never been able to cook nor have eaten better tasting Rajma than that.

Zucchini & Carrot Wholegrain Biscotti –  A Healthy Tea Time Munch

With all the major Indian festivals coming to an end with Diwali, my kitchen counter & wok heave a sigh of relief. No more fudges, sweets and savories, its just my simple meal and me. Change in season has finally made the rain god smile bringing respite from the heat. I wanted to bake something which could be a wholesome munch with my evening tea while lazying around on my favorite easy chair watching rain from my open terrace, and Biscotti was the final choice.

Biscotti is thin sliced cake which are baked twice to make it crisp and also to increase the shelf life of these goodies.

Low-Cal Chickpea Flour Fudge with Palm Sugar – A Healthy Festive Treat

Silence after the storm‘..the last few days of high decibel sound, screaming and running around the road to burst crackers has finally come to rest. Even the intermittent spell of rain did not dampen the spirit of festivity for my kids & hubby for whom my garage was the make shift center for bursting crackers. And no, I will not crib about the land, noise, water and air pollution which was left after the festival of lights was over. When I am not able to influence anyone in my home even after 16 years of marriage, against indulging in sugary sweets, oily savories and buying crackers at exorbitant prize (which could actually get me a dedicated server for God knows how many years) then who am I to complain…’to each his own’.

Fruit & Nuts Cookie Bars – An Easy Dessert and a Perfect Festive Sweet Recipe

Celebrations never end in India, just when I thought that the hectic months of festivals are over, Diwali is round the corner. Time to indulge in sweets and savories again. I love to make sweets which are easy to prepare without compromising on good taste, my time & of course health. And I am planning to bake cookies or goodies which are light on sugar and oil instead of making those time consuming traditional Indian sweets this festive season.

Peanut Butter Fudge with Nuts & Caramel Topping

A sweet indulgence – making Fudge is very common during festivals and many religious ceremonies in India. Though Wiki defines it as a western confectionery, for me a fudge is what completes any Indian festivity as long as I remember. From the humble melt-in-mouth Besan ki chakki (chickpea flour fudge) to the more exotic Kaju Katlis (cashew fudge) Indian festivals are incomplete without these goodies. With loads of sugar, butter and milk to go into making these fudge, these goodies are truly a sinful indulgence!

Peanut butter fudge is high on calories but if eaten in moderation it could provide all the health benefits attached with peanuts in your diet. These Nutty Peanut butter Fudges are highly addictive and a word of caution is to keep a tab on the number of times you open your refrigerator 🙂

A Date with Sunflower Seeds – Baked Healthy Ladoos

Come festival season and all the shops get decked up in new attire, lighting, posters and various gimmicks to attract customers. The most active participants during this time are the sweet sellers. The colorful and attractive array of sweets in the shops are tempting enough to give a try.

Most of the sweets in the shops may not confer to the quality of the ingredients used in it, due to the mere quantity and demand of such goodies. For the same reason I wanted to give a slight healthy twist to this traditional sweet recipe which is almost synonym to Rajasthan.

Churma Laddoo is an integral part of welcoming any guest in Rajasthan. I bake the wholewheat flour balls instead of the normal practice of deep frying them in ghee.
