It was just another day in paradise…spent an evening on beach, had fun and listened to each drop of water tell a story of life! The pleasing sight of vendors selling colorful snacks, lovey-dovey pair lost in their world, elderly couple walking hand in hand and children from the most affluent to common families playing together on the beach…the more I see, the less I know about life.

A trip to beach is always welcoming both to the parents and the children. My kids and hubby love to play in water, make sand castles while I travel to and fro with the waves in my dreamland. Hubby keeps a watch on both children & me, interrupting frequently with “Take care of our shoes, camera, bag …don’t get lost in your own world”.

Just another day in paradise…

I like to take homemade snacks and drinks to beach, these patties are so easy to cook and makes a wonderful treat during such outings. Here are two simple recipes for Patties or tikkies which are healthy, filling and yum.

1. Fresh Corn and Spinach Patties

Ingredients;

  • 1 cup grated fresh corn
  • 1/2 cup chopped spinach
  • 3 bread slices
  • 2 tbsp finely chopped onion
  • 1 tsp. grated ginger
  • 2 green chilies
  • 1/2 tsp. turmeric powder
  • Oil to shallow fry
  • Salt as desired

Fresh corn and Spinach patties

Method; Grate one large corn which is soft and ooze out milk when pinched with your nail. Finely chop onion and green chillies.

Wash and wipe spinach leaves with a kitchen napkin. Chop it finely with a kitchen scissor or sharp knife.

Take a large bowl and add grated corn, chopped spinach leaves, onion, green chilles, grated ginger, turmeric powder, salt and mix well to bring all the ingredients together.

Crumble bread slices with hand and add it to the corn mixture. Bind all the ingredients together to form dough.

Take small tennis ball size dough and give a round shape. Flatten the ball slightly to make a flat disc.

Heat a griddle and place a few patties/tikkis on it. Drizzle one tsp. of oil around each patty and let it fry for 5-6 minutes till it turns golden brown.

Turn to other side and repeat the same process.

Fresh corn and Spinach patties with tomato sauce..

Make all the patties/tikkis and serve hot with green coriander chutney or tomato sauce.

2. Soya Chunks and Spinach Patties

Soya granules and the patties ready to be cooked…

Ingredients:

  • 1 cup dry soya chunks (small)
  • 1/4 cup chopped coriander leaves or Spinach
  • 1 large potato
  • 1 small onion
  • 2 green chillies
  • 1 tsp. grated ginger
  • 1 tsp lemon juice
  • 1/2 tsp. turmeric powder
  • Salt as desired
  • Oil to shallow fry

Method; Soak soya chunks in 2 cups of fresh water for 15 minutes. If you don’t have small soya chunks you can crush the larger ones slightly to break and then soak it in water.

Boil and mash potato. Peel and slice onion. Grate a small piece of ginger and chop the green chilies finely. Wash and pat dry the spinach or fresh coriander leaves with kitchen napkin and chop it finely.

Squeeze the water out of soya chunks by pressing tightly in between your palm.

Take a large bowl and add mashed potato, soya chunks and rest of the ingredients except oil and make soft dough with it.

Pinch a small ball from the above dough and make small patties of round shape. You can add a slice of crumbled bread in the dough if you feel it difficult to make balls out of it.

Fresh corn and Spinach patties – perfect Tea time snack

Heat a griddle and place a few Patties on it. Drizzle a little oil around each patty and let it cook on medium heat for 6-7 minutes till they turn golden brown. Turn them around and repeat the same process.

Serve the hot Patties at Tea time with green coriander chutney or tomato sauce.

Note;

  1. Add extra bread slice if you feel the dough is too soft and you are not able to make round tikkis with it.
  2. You can add spices such as cumin seed powder, garam masala or chaat masala in your recipe to make it more tasty.
  3. Potato and bread act as binders in both the recipes, you could replace the same with a little cornflour, all purpose flour (Maida), bread crumbs or even cooked and mashed plain rice.

    I love the carry homemade snacks too, but then again out here you have to if you want to skip the burgers or pizza! Love the pic of the corn roasting. Both the patties look delicious and I love these simple snacks.
    I cook with soy chunks now and then and Ive always wondered if they are really healthy or just another super processed food?

    I think making savoury cakes is so easy and filling. I just published a post on patties I made with brown rice and chicken. I make similar ones with corn and soy too. They are easy lunch box meals. I love Mark Twain. Time to read one of his books again. That picture has reminded me of his book now 🙂

    What a fun day at the beach! Oh how I miss being near water. Oh well, I’ve traded the ocean for the mountains. I absolutely love the corn patties! Not familiar with soya chunks so it’s hard to know what those would taste like. They certainly look good and for my taste – the corn patties look VERY delicious!
