Recipes | Two Easy & Healthy Avocado Desserts – Food is the Most Delicious Expression of Emotions

Recipes | Two Easy & Healthy Avocado Desserts

Confused and lost, I looked at the bowl of ‘green slush’ on my kitchen counter, again and again.

Hmm…only a magic wand can transform this into a decadent dessert. Should I follow the recipe or leave it just at that.

Avocado is not a fruit I grew up eating. I was introduced to Avocado during one of our trips to Ooty , some time back. The locals who were selling it in the name of ‘Butter fruit’ offered me a slice to taste. It had a bland taste..err… and I left Avocado at that.

Nevertheless, I tried avocado sandwiches after that and we are all now a true avocado convert.

But this time I was trying to whip a dessert with avocado and I had no clue how does it taste like. So with crossed fingers, I added a few more ingredients to that ‘green slush’ and waited with baited breath till dinner time.

And then came the moment we all were waiting for. I almost held my breath and didn’t move a bit when my children took their first bite. They ate, looked at me and gave a mysterious smile which peaked my curiosity 🙂

I could not make out the taste when I scooped my first bite into Avocado Chocolate Mousse, but with the second bite I was instantly transformed into chocolaty haven. The rich, creamy and buttery taste of Avocado mousse seduced me into taking one bite and then another, till I was scraping the corners and reached the bottom of my ramekin.

The no-cook, easy and quick Avocado mousse taste exactly like how I expect my dessert to be.

Food is the most delicious expression of emotions. And I know I would be making this guilt-free dessert again and again.

The preparation of good food is merely another expression of art, one of the joys of civilized living” ~ Dione.

Chopped avocado, banana and coconut cream…..

Method; Peel the avocados and remove the pits, cut into chunks. Peel banana and chop roughly into small pieces.

Add avocado, banana pieces and lemon juice into a blender and pulse for a few seconds.

The puree will be coarse and chunky. Add a tablespoon of coconut milk or yogurt in the blender to make it smooth and creamy.

Refrigerate the coconut milk pack overnight, a layer of thick coconut cream will set on top. Cut the pouch and use the thick cream for better results. Use thick yogurt or curd to replace coconut milk, if you wish.

Add honey and thick coconut milk (or yogurt) into pureed avocado & banana mixture and combine well.

Spoon the avocado mousse into ramekins and refrigerate overnight.

The mousse will thicken as it refrigerates.

2. Avocado Chocolate Mousse

I added a small star anise to give flavor and to hide the raw smell of avocado. Needless to say that my children loved this Chocolaty version of avocado to the plain mousse.

The puree will be chunky and coarse. If you like smooth consistency, add a few drops of milk or water to grind avocado into fine paste.

Pour the thick paste into chocolate mix and combine well.

Banana gives a body and natural sweetness to the first recipe while chocolate in the second dessert is balanced well with the soft and velvety avocado .

Notes;

  1. The riper the bananas used in the first recipe, the sweeter the taste will be.
  2. Avoid honey in the first recipe if you don’t like too much sweet. Sweet of banana is adequate for this avocado dessert.
  3. Use good quality cocoa powder in the recipe.
  4. Use fresh cream in the first recipe if you cannot find coconut milk. You can completely avoid cream and yet get a decadent dessert.
  5. Replace sugar with stevia if you can get it for better health benefits.
  6. Adding a pinch of sea salt to the avocado mousse gives a good flavor.
  7. Slightly chunky avocado puree in the recipe tastes like eating a real fruit dessert.
