A couple in love is like a pair of scissors….two useless pieces of metal, until they are inextricably connected at the core so that they can move together as one and accomplish great things.” ~ Jack Canfield

KK and I have known each other for more than two decades. Marriage is just a reason, but lifelong friendship is the most precious gift that we received on 22nd January 1996.

1996..sweet memories

But then, with our own idiosyncrasies and disagreements, we are two different personalities.

I love to cook and he loves to eat…mathematics ignite his interest and numbers are a big put off to me…he spends hours watching news channels and I hate politics…he can watch any masala movie with the same enthusiasm over and again while I love munching popcorn in theater…if art world is a mystery for him then colours give me life.

As they say “A great marriage is not when the ‘perfect couple’ comes together. It is when an imperfect couple learns to enjoy their differences.

Over the years, we figured out that we could not change each other. We surrendered our egos and slowly started to recognize & appreciate our differences.

That expression, when son asks him to hold his wife and face the camera 🙂

It’s not that we have finally found out that ‘magical formula’ for happy married life, it still is a work-in-progress.

We keep working through the misunderstandings, differences, and grow up a little, every year.

We are having a good time…growing old together, rediscovering ourselves, and finding ways to spice up our lives at every moment!

Happy married life to us…we are 20 and still counting…..

Galette is one of the quickest, easiest and the most visually appealing rustic dessert recipes to bake. I like the rugged edges around the colourful fruits and the caramelized fruit juices oozing out from the galette.

I baked this delicious after-dinner dessert, strawberry Galette to end the beautiful day on sweet a note. My children licked the caramelized juices around the Galette before I could click a proper picture of it 🙂

Recipe | Strawberry Galette with Oats crust

Ingredients;

(Serves 4)

Crust;

  • 1 cup quick cooking Oats
  • 1/4 cup whole wheat flour
  • 20 Almonds or walnuts
  • 4 tbsp. cold butter
  • 2 tbsp sugar
  • 1 tbsp. cold water
  • 1/4 tsp. salt

Filling;

  • 2 cups chopped Strawberries
  • 2-3 tbsp. brown sugar
  • 1 tbsp. butter
  • 1 small cinnamon stick

Method; Preheat oven to 200°C and grease a pie dish.

Grind Oats, nuts and sugar into fine powder.

Take the oats and nut mixture in a bowl and add wheat flour, salt, cold butter and rub the mixture lightly with your fingers.

Sprinkle cold water over the dough to bring all the ingredients together.

Add a few drops of water if the mixture seems too stiff to hold.

Press dough dow into a think circle and wrap in a plastic sheet.

Refrigerate the dough for an hour.

Melt butter and sugar in a pan. Add cinnamon stick and chopped strawberries in it and take it off the heat.

Press the mixture into a circle on a greased pie dish and fold the edges lightly.

Assemble butter and strawberry mixture in the centre of the pastry dough and fold the edges around the filling as in the picture above.

Sprinkle a little brown sugar over the strawberries and bake the Galette for 35-40 minutes until the edges turn light brown in colour.

Let it cool slightly and dust with powdered sugar before slicing it.

Notes;

  1. Replace cinnamon stick with 1/2 tsp. cinnamon powder.
  2. Substitute cold coconut oil or olive oil with butter for healthier version of the recipe.
  3. Strawberries can be replaced with any stoned fruit such as fresh peaches or plums.
