The year 2016 has been a whirlwind.

I met so many amazing people, ventured into a couple of projects involving uncertainty, yet successfully completed all and learned so much last year. With all the ups and downs of last year, the one thing I always remember is to smile and look up at what I got in life.

And yes, I can’t thank my lucky stars enough…what started out as a small project of clicking pictures and jotting down recipes on my blog Lite Bite some years back, has now grown into a wonderful vocation..way beyond my expectations!

The year 2017 started on a happy note when I received a copy of the local magazine featuring my work in it..

Well, I don’t know what’s in the plate for 2017 for me, but for now I am one happy girl for sure 🙂

Well, on one hand, working towards your dream job feels rewarding but on the other hand managing the real and the virtual world becomes really tough.

I am now slowly adapting myself into it, in a way that fits-in with my world.

In doing so, my social media anxiety has reduced to some extent and so has the urge to constantly update status and to get into the loop of positive reinforcement by liking or commenting on various platforms.

Hmm..all is good until it goes bad again 🙂

The year started with many family trips to various temples and beaches around the city.

Tired and haggard looking me with son and daughter after an adventurous catamaran ride on the beach early in the morning.

We visited a few ancient temples on the way and tasted local delicacies sold by the villagers.

These are the fiber rich palm sprouts or panam kizhangu from palmyra plants which are sold by the villagers on road side. I am yet to develop a taste for these local delicacies but hubby enjoyed a few of these snack on the go.

Then there was a small family function performed for daughter at home..

Her birthday falls on 1st January and she wanted a small party for her friends..on the whole a good start to 2017.

I completed a few television commercials also… this tvc shoot is for Hatsun brand (curd and milk powder) for slingshot production house.

This was my first encounter with high speed camera photo-shoot for the product. It was highly demanding but a very much fun shoot.

I teamed up once again with my favorite production house for Arabhi and Avinash of Happy Unicorn for Aachi Jam shoot.

The props used for the shoot were massive, there were large orange boats, artificial jungle, make-shift hot balloons and more in the studio.

Oh yes..there is also a lot of cooking and baking going around at home. It’s just that I don’t get much time to post about all that is cooked.

I baked a chocolate cake and these Oats cookies today (12th Jan) for son’s 17th birthday.

Ingredients;

(15-16 cookies)

  • 1 cup quick cooking oats
  • 1/2 cup grated jaggery
  • 1/4 cup oil
  • 3 tbsp. Wheat flour
  • 3 tbsp milk
  • 1 tbsp flaxseed powder
  • 1/2 tsp.ginger powder
  • 1/2 tsp. baking powder
  • Chocolate chip as required

Method; Pre heat the oven at 170c for 10 minutes.

combine flaxseed powder with milk in a small bowl and keep it aside.

Grind oats with grated jaggery into coarse powder.

Take a large bowl and add ground oat-jaggery mix, chocolate chips, wheat flour, ginger powder, baking powder and combine well with a fork.

Pour oil in flaxseed and milk mixture and whisk it lightly with fork and pour it over dry ingredients.

Combine all the ingredients to make soft dough.

Make small balls of cookie dough, press it lightly and place it over greased baking tray.

Bake the cookies at 170° for 12-15 minutes or until the edges turn golden brown.

Let the cookies cool down completely on a wire rack before serving.

    Hi Sanjeeta,
    I tried these oat cookies with almonds instead of chocolate chips. They turned out fine and crunchy from above, but soft on the underside. Also i stored them in a container overnight, and the next day they were completely soft. Is there anyway to make them crunchy or is this texture of these cookies?

    Thank you for all these lovely recipes, I really enjoy reading your site.

    @Vibha, Homemade Cookies tend to loose crunchiness after some time. Try making thin cookies and bake for a little longer time for crunch.
