Ragi or Finger Millet Pancakes for a Healthy Breakfast

Ragi Pancakes

Pancake is a weekend breakfast at my home. And I often get worked up thinking new ideas and innovative ways to bring different flavors and taste to pancakes. This time I tried adding Ragi, Finger Millet to my Pancake batter just to add extra bit of nutrition to the breakfast. And I was surprised when my 6 years old daughter enjoyed and finished it without any complain 🙂

Ragi Pancakes

Ingredients;

(serves for 4)

  • 1/2 cup of Refined flour
  • 1/2 cup of Ragi flour
  • 1/2 cup of curds
  • 3 tsp. of Granulated sugar
  • A pinch of Salt
  • 1/2 tsp. Baking soda
  • 1 tsp. of Cinnamon powder
  • Oil for shallow frying

Method: Take a big vessel and add both the flours in it. Mix in the salt, baking soda and cinnamon powder and keep it aside.

Take another vessel and add sugar and curds into it. Whisk it thoroughly for a few minutes.

Pour the sugar and curd mix into the dry powders. Give a good stir.

Heat a girdle and pour a ladle of the pancake batter on it. Sprinkle a tsp. of Ghee or butter around it. Turn the pancake and do the same for the other side.

Serve the hot Ragi Pancakes with honey, fruit syrup or jam.

    I make it a lot- My recipes add 1/2 cup of grated coconut and brown sugar instead ofwhite sugar.I make a sauce with 1/2cup of any flavor jam with 1/2 cup of water and whisk to make a thick syrup. we get lite syrups and no sugar added syrups too in USA. this is a great source for diabetic patients. I love all the recipes you are collecting, adding to your site and all you are creating .thanks for sharing
