Healthy Breakfast On the go – Mighty Sandwiches

During weekdays with hectic school schedule and busy office routine, breakfast is the only effective meal time when I can stuff my kids and hubby with all the goodness of veggies, fruits, nuts and cereals.

Over the years I have experimented with various breakfast recipes liked by my family and which also give me ample time in the morning rush hours besides providing them with good nutrition. And Vegetable Sandwich is one such recipe I count upon.

Easy & Eggless Almond Meal & Oats Cookies

Make hay when the sun shines’ And I did the same with the surplus almond meal I had. Baked almond & Oats cookies with it 🙂 with the extra almond flour left after my first stint with the macarons . And I am in love with these healthy, chewy and nutty cute cookies with my hot chocolate drink in morning breakfast.

Party Menu – Refreshing Yogurt Rice

Yogurt rice is the most relishing recipe I discovered after coming to South India. Till then curd was just a tall glass of Lassie or a delicate dessert Srikhand. Only after getting married I did come to know that the humble Curd can also be transformed into a very delicious and healthy meal! And like my hubby for many people down here, no meal is complete without a small ladle of creamy curd rice. Quite easy to make this refreshing dish adorns many a lunchboxes of office goers and school kids.

Stollen-An Egg less Tea Time Bread

Stollen is a bread like fruit cake baked with yeast, flour and dried fruits and nuts in it. This is a wonderful Tea time snack and a great breakfast treat which is quite easy to make. It stays good for many days and is extremely flavorful with loads of citrus zests, candid peels and spices in it.

Easy Eggless Wheat Germ Muffins

Wheat Germ is one among the precious food ingredients which often fight for a place in my refrigerator. Blueberries, black current, prunes are some of the few contenders. Since getting these exotic foods is difficult here, I normally buy them in large quantities whenever I get a chance to do so.

I dry roast these Wheat germs and store them in a zip lock inside the refrigerator. These then get into my baking, porridge, chapattis, chutneys and various other recipes. Wheat germ gives a beautiful nutty flavor to the dishes.

Walnut & Banana Eggless Cake recipe

Though banana has never been in my favorite fruit list, but I love this humble fruit in my baked goodies. When combined with some nuts it gives an irresistible taste to the baking recipes. Not to forget the in numerous health benefits it lends to the dish.

This Walnuts & Banana egg less Cake is one such baked delight I often resort to when I have banana in surplus. And this time used the red skin variety of banana found commonly in many parts of south India.

Goldmine of nutrients in small bundles- Nuts are a great foods that heal. Though moderation is the key word when one reverts to a diet on Nuts. Though they come with a high price tag, but just a handful of these nuts are enough for a day and can make a great difference to a healthy living.

Healthy Granola Bars for Kids

Snacks are a good way to add extra nutrients in our diet, more so when we are loggerheads with time. A healthy bar of Granola in the snack box of kids will make sure they get the goodness of nuts, cereals and other minerals all packed in one.

Granola also makes a quick & healthy breakfast when mixed with yogurt and other cereals. A great snack to satisfy after school and office hunger for the kids and adults as well, Granola is a prudent choice in our diet. Eggless Healthy Garlic Scones…err…Quick Bread
Scones…quick bread…savory cookies? ‘Whats’ in a name!’ For, what could be more satisfactory than a quick and easy to make tea time snack which is healthy too.
With the goodness of wholewheat, curds, oats and garlic these cute goodies are one of my favorites. And my kids loved to help me out in rolling and giving shapes to these Garlic scones. The caterpillars in the baking tray are their creations 🙂

Easy Wholewheat Cookies

Crispy and crunchy cookies with hot chocolate drink, a perfect combo when friends are around for a chit-chat. I made these easy wholewheat cookies last weekend to welcome my childhood friend from Australia. Relived the fun filled school days with these scrumptious Easy wholewheat cookies to accompany 🙂
