A delicious meal is great, but a dessert is even better. A handful of fresh fruits, few biscuits, a little yogurt or cottage cheese and you are in for a refreshing and healthy treat everyday. Dessert recipes that are easy on the stomach are preferred anytime in my home to heavy & creamy ones.

There is nothing worse than having to wake up every morning and getting ready to go to work you don’t like.

I joined my first corporate job after finishing my second masters’ degree, back in 1990.

But soon found myself jumping from one job to another, before settling for the one I liked. May be, I was not ready to adapt myself to my new routine and  probably was intimidated by those high-pressured corporate jobs, during the initial phase of my work life.

Hmm…I should have learned to love what I did and continued…too late.

Growing up, we used to visit our granny every holiday. Reaching late at her house and being treated with warm and comforting Bajra khichda (millet porridge) was the best part of our trip.

She would welcome us with a sweet smile and rush to her kitchen to cook a quick meal. The wooden hearth would be hurriedly filled with charcoal to light the fire. She would then open the large round aluminum box placed neatly on wooden shelf and take out handful of wholegrain and lentil grits from it.

Recipes | Easy Pan-Fried Semolina and Cornmeal Flatbread or Harsha – Celebrating Life Together

After spending close to 20 plus years in my kitchen, I am still unable to find the answer to my question, ‘what goes wrong whenever I try to cook the recipes of my mother.’

I use the exact ingredients, follow her instructions precisely, but my recipes never turn out to be as good as hers. No, not even the simplest ‘Dahi wale Aloo’, tastes the same.

I dislike short-cuts in cooking. Ready-to-use spices in sachets or snapping those large plastic bags of flour are a big no-no in my kitchen.”. replied mom over phone, when I put forward my query to her.

Well, you have loads of time to your discretion to make your own spices and grind flour, mom. I have to make-do with these short-cuts, until I get relieved from my family commitments.”. I replied and pacified my ego.

Days pass and memories fade, but the more I cook and write for Lite Bite, the more memories I remember and cherish here.

2013 was yet another wonderful year. I enjoyed every moment of my on line journey through Lite Bite.

Recipes | Two Easy and Healthy Fruity Desserts, Cottage Cheese Mousse & Yogurt Parfait – Say Yes to Desserts

A delicious meal is great, but a dessert is even better. A handful of fresh fruits, few biscuits, a little yogurt or cottage cheese and you are in for a refreshing and healthy treat everyday. Dessert recipes that are easy on the stomach are preferred anytime in my home to heavy & creamy ones. Nothing is more  rewarding than to see my children appreciating & preferring these home made healthy desserts over store bought ice creams.

These two desserts are now a regular feature on our dinner table, just that the fruits and the biscuit/cornflakes base keep changing to bring in more variation in the recipes. Cottage cheese and yogurt give that feathery touch and extra freshness to the recipes.

Dessert | Wedding Delicacies from Rajasthan – A Celebration of Love and Many Emotions

An Indian wedding is a perfect blend of traditions, grandeur, delectable cuisine and sacredness of celebrations. The unbound enthusiasm and the flow of emotions of all the family members have to be seen to be believed.

My children have attended many Tam Brahm marriages of their paternal relatives in Chennai but have never seen any Rajasthani marriage from my side. They were too small to remember anything about my brothers’ marriage in 2004, son was hardly four years and daughter was just a few months old.

During my recent  visit to Udaipur in May 2013, I got a chance to take them to a typical Marwari marriage.  And they were really amused to notice the stark differences between the rituals and proceedings of marriages of two states of India. My daughter quipped that she wants to get married in Rajasthan so that the groom comes riding a horse 🙂

It’s the simple things in life that are the most extraordinary.’ Paulo Coelho.  Life is harder when you complicate the simple things and my cooking follows suit to a greater extent. Most of the days I prefer dishes which need less time to cook, have fewer ingredients and still retain the freshness & nutrient quotient intact. These simple recipes are a perfect antidote for those busy days when you are hard pressed for time and need something healthy and filling which can be thrown in just minutes.

This warm Chickpea and Veggie Salad falls in the same category. I defer to call this recipe just a simple salad, with Olive oil, mixed veggies, bread croutons, herbs, spices and protein packed chickpeas, this recipe makes a complete meal in itself. I could happily start and end my breakfastlunch and dinner with a bowl of this chickpea and veggie salad.
