Easy Almond meal Cookies

Make hay when the sun shines’ And I did the same with the surplus almond meal I had. Baked almond & Oats cookies with itΒ  πŸ™‚Β  with the extra almond flour left after my first stint with the macarons . And I am in love with these healthy, chewy and nutty cute cookies with my hot chocolate drink in morning breakfast.

Easy Almond meal Cookies

Mighty Almonds!

Almond meal Flour: Wash the almonds and pat dry them using a kitchen napkin. Blend them into a coarse powder in a blender.

My homemade Almond meal

I used the fine powder from the ground almonds in making the Macarons here.

Easy Almond meal Cookies

Almond meal and Oats

Ingredients;

  • 1/2 cup of Almond meal
  • 1/2 cup of Oats
  • 1/4 cup of Wholewheat flour
  • 1/4 cup of honey
  • 1 or 2 tbsp of curd/yogurt
  • Almond essence

Refrigerate the dough.

Method: Grind the almonds and oats together in a blender. Take a big mixing vessel and add ground almonds & oats into it. Add rest of the ingredients except the curd and mix well.

Add just a little quantity of curd and mix it to make a dough. The dough should just hold together when pressed slightly. Avoid adding too much of curd to make crisp cookies.

Cover the dough in a cellophane wrap and refrigerate it for 3-4 hours.

Baking in the oven.

Preheat the oven at 180 degrees for 10 minutes. Grease a parchment paper or baking sheet.

Take out the dough from the refrigerator. Make small balls from the dough and flatten with palm to make a flat cookie. Arrange all the cookies on the parchment paper leaving a gap of 2-3 inches.

Packed for a photo session!

Bake the cookies at 180 degrees for 15-20 minutes or till the sides start getting brown in color. Take out the baking tray from the oven, the cookies will look very soft to touch at this stage, but will firm up soon after a couple of minutes.

Easy Almond meal Cookies

Crisp from down below!

Store the Almond & Oats cookies in an airtight container to retain the crispiness.

Melt-in-mouth cookie bite…

Notes;

  1. Use powder sugar if you do not like honey. 1/2 cup of powder sugar will be good for these cookies (increase the curd when using powder sugar).
  2. Reduce the honey even further if you do not like sweet cookies for breakfast, which I did and am liking it.
  3. These Almond & Oats cookies are a good addition for your kids snack box to school, with health benefits of almonds & oats in it.

Delicious coookies. Can I use brown sugar if want the color and make in MW oven. Any adjustments accordingly?

  • sanjeeta kk (author) said:

@Radhika, Yes you can use brown sugar, will give a good color and flavor to the cookies. Or just add a tsp. of instant coffee powder/cocoa powder for color and taste. By MW oven, I suppose you mean the convection mode. I baked in the convection mode.

  • Anusha said:

made these cookies yesterday ! came out nice, but could not get it to be as crisp as urs… I used minimal yogurt as suggested …. what else could it be ? I used powdered sugar instead of honey…. could that be the reason ???

thanks for a healthy cookie recipe ….
    Anusha

  • sanjeeta kk (author) said:

@Anusha, These cookies come out chewy due to honey and powdered almond meal in it.

  • krishma said:

  • sanjeeta kk (author) said:

@Krishma, I used unbranded Honey that we bought during our trip to Ooty sometime back. You could use any good brand of honey for the same.
