Rice Made Easy – Lemon Rice Recipe

Tangy rice recipe for a great lunchbox treat. Easy and quick to prepare this Lemon rice is a good travel food also, as it stays good for almost two days without refrigeration.
Ingredients;
(makes 1 servings)
- 1 cup cooked rice
- 1/2 lemon
- 1 small green chilly
- A few sprigs of curry leaves
- 1/4 tsp of mustard seeds
- 1/4 tsp Turmeric powder
- 1 tsp of Groundnuts (optional)
- A pinch of asafoetida powder
- a Pinch of fenugreek powder (optional)
- salt as desired
Method: Prepare the rice as per instructions and spread the cooked rice on a plate to let it cool. Heat oil in wok and fry the groundnuts in it for 1 minute. Crackle mustard seeds in in the hot oil and add the slit green chilly, curry leaves, asafoetida powder, turmeric powder and salt in it.
Take off the flame and squeeze half the lemon in the above cooked mixture. Pour this lemon mix over the cooked rice and mix well.
Serve Easy Lemon Rice with chips or pack it for a great lunchbox.
