Grilled Cottage Cheese & Soya Nugget Kebabs – A Delightful Appetizer

Summer vacations for children and my kitchen counter is all strewn up with chocolate shavings, marshmallow bits, cookie cutters and all that excite their fancy. My mommy cap is on to create special dishes to please the children and also keep them interested in eating food which is healthy and scrumptious as well. Food which should be exciting enough to make them forget the cravings for the junk foods they always love to have given a chance. These grilled cottage cheese and soya nuggets kebabs proved to be a right choice for a great weekend. Crisp, healthy and a great munchy recipe to snack upon while playing a favorite board game together in the hot weather.

Potato and soy Kebabs

Ready to be grilled…

Ingredients;

(serves 4)

  • 1/2 cup fresh cottage cheese
  • 1/4 cup soya granules
  • 2 potatoes
  • 1 small onion
  • 1/4 cup fresh Bread crumbs (optional)
  • 1 green chilly
  • 1 tsp. red chilly powder
  • 1 tsp coriander powder
  • 1/2 tsp. roasted cumin seeds powder
  • 1 tsp chaat masala/dry mango powder
  • Salt as per desire
  • 2 tbsp. Fresh coriander leaves
  • 3-4 tsp. oil

Healthy grilled Soya kebabs

Method: Boil the potato and mash it. Soak the soya granules in little water for 10-15 minutes, drain the water and squeeze the granules. Wash and chop the coriander leaves finely. Peel and dice the onion into fine pieces.

Crumble the cottage cheese and keep aside. To make fresh cottage cheese check this link below;

Cottage cheese

Take a large vessel and add the mashed potato, crumbled cottage cheese (paneer), soaked soya granules and rest of the ingredients except the oil in it . Mix all the ingredients thoroughly.

Keep the skewers ready smearing them with a little oil.

Take a small ball about the size of a tennis ball and  wrap it aorund the skewer to cover 2/3 of it. Press it lightly to secure the kebabs. Repeat the same process with the rest of the kebabs.  This will make about 5-6 kebabs.

Healthy grilled Soya kebabs

Put an aluminum sheet over the baking net and place all the kebabs over it. Brush each with oil on all the sides. Grill the kebabs for 30 minutes or more till they look golden brown and make a lovely crust. Roate the kebabs and brush them with oil in between to give a good coating and a shiny glaze over the kebabs.

Healthy grilled Soya kebabs

Take out of the oven and let it cool. Cut into roundels and serve hot with mint spread or tomato sauce.

Notes;

  1. If you don’t have an oven you can cook the kebabs on a girdle or tawa also.
  2. Fresh peas, sweet corn and cooked carrot will be a great addition to these kebabs.
  3. These kebabs make a lovely picnic treat.
  4. As an appetizer these grilled cottage cheese and soya nuggets kebabs can really rock any party!
