Bring Back The Corn – A Cornmeal Sweet

These cute little delicacies of the whole grain Cornmeal brings back the memories of childhood days. When mom would often involve us in making these laddoos and we used to unwillingly succumb to her demands for want of these scrumptious treats 🙂

Our job was be to powder the corn bread and make the balls from the dough. This recipe is quite easy and simple to follow with no cooking at all, provided you have the cornbread or corn chapattis with you.

Ingredients;

(makes 30 small balls)

  • 11/2 cups of coarse cornmeal flour
  • 1 cup of sugar
  • 1/4 cup of Clarified butter or ghee
  • 1 tsp of cardamom powder
  • 3-4 tsp. of crushed almonds or cashew
  • A few raisins (kishmish)
  • Water for kneading dough

Method: Take the cornmeal flour in a big vessel and sprinkle water over it. Mix the flour gently and make a hard dough out of it. At this stage you can either make a chapatti or make balls and bake it.

Corn Chapatti: Take a plastic sheet and sprinkle a little oil on it. Take a small ball of the prepared dough and knead it gently with a rolling pin. The cornmeal dough is very brittle and require extra patience to roll it out.

Dry fry the chapattis on a hot tawa on both the sides and keep it aside.

Corn ball: Make rounds from the prepared dough. Bake it in the oven for 20 minutes at 180°C.

Corn sweets: Crumble the chapatis or the baked balls into small pieces. You can grind these small pieces in a mixie to make fine powder.

Add in rest of the ingredients and mix thoroughly.

Make small balls out of the cornmeal mix. Store in an airtight container, stays good for 3-4 days.
