Colorful Coins For Kids – Potato & Soyabean Snack

A prudent way to practice healthy eating in children is to start variety foods at a younger age. As an adult we  normally follow the same diet which our palates are used to, from our childhood days. And adjusting and trying out for new food is quite difficult when we grow old.

My kids resist any new recipe or a food ingredient, which looks or sounds unusual. It was quite difficult to introduce soybeans in their diet and this recipe calls out for my successful trials of the same.

Quantity of Soy chunks was minuscule in the beginning, but increased to a substantial amount as they started liking the taste of it.

Ingredients;

(Makes 5-6 coins)

  • 1/2 cup of soy granules
  • 1/2 cup of mashed potato
  • 1 small onion
  • 1 tbsp grated carrot
  • 1/2 tsp mustard seeds
  • 1/4 tsp red chili powder
  • 1/4 tsp turmeric powder
  • 1.4 tsp coriander powder
  • salt as desired
  • a pinch of asafetida
  • 1 cup of batter for the basic coins

Method: Soak Soy granules in clean water for 5 minutes. Squeeze the granules and keep it aside. Peel and slice the onion finely. Scrape and grate a small carrot. Boil a small size potato, peel and slightly mash it.

Heat oil in a skillet, add mustard seeds and let it crackle. Add onion and fry it for a minute, and mix in the dry spices. Stir for another minute and add the rest of the ingredients. Mix the whole filling thoroughly. Take off flame and keep it aside.

Basic coins: Make the batter as described here. Heat a non-stick tawa and pour a small ladle of this batter on it. Sprinkle oil on all sides of the basic coin and let it cook for one minute. Turn it to the other side and cook the same way. Make all the basic coins and keep aside.

Take the basic coin and spread the prepared filling on top. Serve it hot with tomato sauce or fresh coriander spread.

Try this fruit spread on the basic coins for a fruity touch. Apply a little fruit concentrate and add fruits of your choice.

Simple recipes can be given a little make over to make it more kids friendly. Children dislike the repetition of lunch box recipes. Try innovating different ways to pack a creative lunch box for kids using the same old recipes and see them smiling after the school hours.

I have a 1 and 4 months old too. slowly trying to introduce him to normal diet. and I totally agree this is the time when they should be given healthy and filling meals to have a good habit for life.

    I agree totally. My daughter love snacking on tofu, she eats fresh fruits each day. Lately she’s been into apricots and lychees. She love furikake sprinkled on her rice because she says it tastes like sushi(which she loves). If you start the kids at a young age trying new things, they will definitely eat healthier…or at least mine has. I will add this to our list, it looks so good and creative!
