A Subzi or vegetable stir-fry is an integral part of an Indian Thali (platter). If Subzi is one of the important components alongside a flat bread in a North Indian thali then it takes the form of an accompaniment to rice dishes in South India.

Subzi also refers to any vegetable in Hindi. I like these quick subzis made with fresh vegetables more than the slow-cooked curries wherein the vegetables are completely lost in the flavors of spices and gravies they are cooked in. Whether it is a rich Peas and paneer butter masala or a creamy malai kofta, to me they all taste same.

I am jealous of your husband and kids, they get to eat five-star cooking every day” was one of the questions in an online interview on Ganga’s blog here. And she is the nth person to have said the same to me.

The fact remains that most of days what comes out of my kitchen is a simple one-skillet meal with whatever spices or vegetables I have on hand. Yes, my personal favorite is simple Indian food which is quick to cook and is very near to its natural state.

Well…competing for the title of Master Chef is never in my mind, every time that I take a ladle in my hand 🙂

Back then I had loads of time in hand. My home and life was well organized and I never knew what ‘racing against time’ meant.

I was happy, but still felt a void in life and was searching for ways to fill it. As they say, change your perspective when you think your life is incomplete without something.

And then, food blogging happened.

Now the equation of life has changed. Five days to go for a food blogger meet, a deadline to meet for print media and a high-pressure photo shoot on very short notice.

And yes, I am racing against time…but I am content 🙂

I got to know the enormity of the said project, a television commercial for Malaysia after meeting the director in evening and was slightly skeptical to take it.
I was a bit nervous when I entered the location early morning, what with hundreds of people running helter- skelter carrying giant light boxes, reflectors and the like.

I gave myself a few moments and quickly regained my composure after seeing a few familiar faces on-location. And after that there was no looking back.

Every time a photo-shoot assignment lands on my lap I am like a happy kid, running around, shopping, planning and stacking props enthusiastically for the shoot.

Not so long ago, mornings at home used to be quiet and slow. There was ample time to go for a brisk walk, get fresh vegetables en route, sit back, read newspaper and relax with a cup of tea.

And yes, there was absolutely no temptation to check the social media status, answer emails or to update the blog either.

Five years of online journey and suddenly life has become so fast-paced. I find myself  chasing ‘time’ with thousand dreams each day. Times when I feel how much media causes to miss out on simple pleasures of life.

Whoever said that,, “Media has a trade-off between its usefulness and its ability to waste your time.”

While the lentils cooked, I started chopping the red Amaranth on my cutting board watching the two tiny squirrels play catch-me-if-you-can on the mango tree outside.

As I stood there silent, my mind began to wander and I started reminiscing about my childhood days…yet again.

When in school, I and my brother disliked leafy foods in any form. So much so that our school lunchboxes never saw any vegetables other than potatoes and Okra for as long as I remember.

Who on Earth loves eating this laal chawli bhaji (red Amaranth) mom. It looks so yuck?” I would make faces in vain after seeing the slimy mass on my plate, hoping that she would stop making the same…someday.

A long angry look from mom and we would continue to shovel that slimy Chawli bhaji without uttering another word.

It didn’t matter if her child were three, thirteen, or thirty.”  After being a mother myself, I feel blessed that I can still just be a daughter that gets pampered and showered with love by her mom year after year.
It is strange how we hold on to our past through food, friends and family we leave behind. I was so happy to see someone visiting me from my homeland, Udaipur.

After spending close to 20 plus years in my kitchen, I am still unable to find the answer to my question, ‘what goes wrong whenever I try to cook the recipes of my mother.’

I use the exact ingredients, follow her instructions precisely, but my recipes never turn out to be as good as hers. No, not even the simplest ‘Dahi wale Aloo’, tastes the same.

I dislike short-cuts in cooking. Ready-to-use spices in sachets or snapping those large plastic bags of flour are a big no-no in my kitchen.”. replied mom over phone, when I put forward my query to her.

Well, you have loads of time to your discretion to make your own spices and grind flour, mom. I have to make-do with these short-cuts, until I get relieved from my family commitments.”. I replied and pacified my ego.
