The two things that still lingers long after our visit to the hills of North India are the unpolluted air and the juicy fresh apples & plums we ate on our way from the orchids.  Blessed are those mountain people who are surrounded by the natural beauty and bounty. I was amazed by the abundance of fresh fruits in the valleys strewn all over the farms and roadsides, while back at home I often compare the prizes and buy them in numbers.

During our two days stay in a friends’ place I loved eating their special dishes, even the Rajma curry tasted different, pure mountain water and soil makes a big difference, they say. Think of a quick chutney recipe and it is either fresh coriander, mint, tomato or coconut for me, but most of the mountain people opt for fresh apples, prunes, plums or any other berry to make the chutney.

Versatile dips & spreads which could be made quickly and peps up a meal instantly are my all time favorite. Ubiquitous green chutney with fresh coriander & mint leaves in my refrigerator tops the chart by all means. Yes, I eat it with my flat breads, use as sandwich spread, on crackers, tarts, Khatti rolls, pizza topping…and so on.. Hummus is one another favorite of mine, a refreshing & healthy dip prepared with chickpeas or Garbanzo beans. The recipe is often twisted & tweaked to come up with yummy surprises..well..almost always 🙂

Melon Cucumber Spread and A Book Review

It has been long since I invested in a good cook book. I have been collecting cook books from my college days and have more than 200 plus of them crying out for space in my shelf. Somehow most of the books are mere hard copies I hardly refer to for my cooking.

Recently I came across a cook book ‘Cooking At Home With Pedatha’ written by the wonderful duo Jigyasa Giri and Pratibha Jain. The book instantly caught my attention with the elegant cover and the subtle colors giving it an aesthetic look. The simple grandma’s recipes with useful tips and perfect pictures to match up with easily connects with the readers at the first sight.

Healthy Mixed Fruit Jam with Palm Sugar – Guava Preserve

My passion for Palm sugar has made me try out a few more recipes which normally are a forte of not-so-healthy white sugar. Even though Palm sugar is not devoid of all that is bad for health, at least I get the extra nutrients from it which are missing in white sugar. I purchased a lot of the pink colored Guava on impulse and was wondering what best can be done with the leftover overripe fruits. The other fruits in my refrigerator helped me out in making this wonderful fruit preserve – Healthy Mixed Fruit Jam.

Palm sugar gave a rich and dark Jam while the white sugar preserve is light and transparent. We had this fresh fruit preserve with freshly baked Wholewheat English Muffins this weekend, and could ask for more for a scrumptious breakfast!
