Recipes | Instant Oats Idly Satay with crunchy peanut sauce – Coming out of the comfort zone again

Life has many ways of testing a person’s will, either by having nothing happen at all or by having everything happen all at once.” ~ Paulo Coelho

Life throws challenges when we least expect it. I received a call from ‘Deccan Chronicle’, an Indian daily news paper the other day.

We have been browsing your blog and are very impressed, would you consider being a columnist for our daily?” a media representative inquired in a sweet voice on other end.

With on- going workshops and a food styling project I was not sure if I can commit myself for one another work. I asked her a days time to decide and called my hubby.

I feel you should take up this challenge. I can see you getting lazy and comfortable within your comfort zone. This might help you create new possibilities in your career” He answered.

Recipes | My Complete Go-To Dinner – Four Healthy Pasta Dishes

Growing up, we rarely had Pasta in our menu. Not that Pasta was easily available in India, it was non-existent in mom’s kitchen. The only recipe I could remember which remotely resembled today’s Pasta was our indigenous Daal Dhokli. Hmm…those delicate stripes of whole grain pasta…err…Dhoklis floating in spicy lentil broth…I would never trade my hot steamy bowl of Daal Dhoklis for any fancy pasta, not in the least.

But no matter how creatively you present these traditional recipes, children are children, they fail to notice.

As your children grow older, your sayings on the dinning table fall off and your food preferences are put to shelf.

Baking | Oatmeal & Almond Slices – Of Friends, Food and A Memorable Travel Trail

Remember the tiny kiosk where we had kulhar (mud pots) tea near Jhulaghat, that small village we stopped by for breakfast alongside river Kali, and the green house we barged in for lunch….everything is washed away in flood.” She told in one breath.

My heart feels heavy every time I watch the happenings in Uttarakhand, India on television.  The early heavy rains, flash floods and landslides in Uttarakhand or Uttaranchal last month have devastated this beautiful hill station of India.

I called ‘M’ my childhood friend from Uttarakhand the other day to inquire about her family. She could not stop cribbing about the mindless construction of illegal hotels and resorts by outsiders on river beds all around the valley leading to deforestation. “Hazards are inevitable, but such human activities convert hazards into catastrophe…and that’s what we are facing right now” I could feel the despair and vulnerability in her voice.

Recipe | Two Easy, Quick and Healthy Warm Chickpea Salads – Simple Things in Life That are most Extraordinary

It’s the simple things in life that are the most extraordinary.’ Paulo Coelho.  Life is harder when you complicate the simple things and my cooking follows suit to a greater extent. Most of the days I prefer dishes which need less time to cook, have fewer ingredients and still retain the freshness & nutrient quotient intact. These simple recipes are a perfect antidote for those busy days when you are hard pressed for time and need something healthy and filling which can be thrown in just minutes.

This warm Chickpea and Veggie Salad falls in the same category. I defer to call this recipe just a simple salad, with Olive oil, mixed veggies, bread croutons, herbs, spices and protein packed chickpeas, this recipe makes a complete meal in itself. I could happily start and end my breakfastlunch and dinner with a bowl of this chickpea and veggie salad.

Recipe | Easy & Healthy Broccoli Patties – Simple Pleasures of Life

‘ If you truly love Nature, you will find beauty everywhere‘. ~ Van Gogh.  Early morning walk with my hubby is one activity I eagerly look forward to each day. Its a wonderful time I see some of the miracles of nature unfold as we walk along the narrow lanes and parks nearby.

The dim sky, the fresh morning air, quietness and the gentle pace of life is so enchanting.  The thumping of joggers zipping across, symphony of chirping birds, cling-cling of the milkman and the newspaper boys on cycle break the silence of nearly empty roads.

I have started appreciating these simple and small beauties of nature more and more after my new found love for photography. During one such walks I picked a few colorful leaves dressed in morning dew.

Recipes | Three Easy and Healthy Indian Breakfast Treats – Let there be Art

Creativity has no boundaries and is best expressed when the mind is free and the world is your canvas to work upon. For the last couple of days South Indian cinema and politics is abuzz with a certain ban on the release of a Tamil movie. Though I don’t follow the happenings from the field of cinema or politics much, but this one caught my eyes. People in the shops, morning walkers, school children, my maid and not to forget the screaming TV channel anchors, everyone seems to be worried about the freedom of expression overnight.

Anyways, hope both the sides resolve the issue amicably soon and the freedom of an artist to express art without any boundaries or political pressure is restored and also the powers of politicians to bring in peace and justice are appreciated.

Recipes | A Few Healthy Savory Indian Breakfast treats with Sago and Semolina

I have lost count of the number of times I tried soaking sago for making this popular breakfast recipe and using the same for starching my sarees. Those were the days when I stayed away from mom for higher studies in Delhi and later for job prospects. Bored of my usual sandwich breakfasts I wanted to try my hands on some of the Indian breakfast recipes I used to love eating but would dare not make it.

I simply couldn’t get the correct sago consistency to make the Sabudana Khichdi which is non sticky and fluffy. And most of the times the soaked sticky sago was used to starch my office sarees.

A signature dish of Maharashtra in India, Sabudana Khichdi or Sago breakfast recipe is mainly cooked during fasting period when certain food items such as grain, pulses, onion & garlic are avoided. But then neither do I fast nor do I wait for any occasion to cook what I love 🙂

Recipes | Spinach Rolls & Instant Savory Cake – Two Healthy Snacks with Chickpea Flour

Ahaa.. finally its here – the Summer Holidays, time we all look forward to year after year! Trip to home town, loads of  ‘me time’ to relax and also to complete all the pending tasks I have been procrastinating the whole year wearing the shield of ‘no time’ 😉

My euphoria is but short lived, the very next day of the holiday and the mom is busier than ever. Library, cricket coaching, dance classes, piano lessons…and repeat. Well, as a good mother I also need to keep my children engaged and make their holiday more productive. Till then..’me time’ can wait.

Sprouted Green Gram, Roasted Bell Pepper, Orange Zest and Two Hummus Recipes

Versatile dips & spreads which could be made quickly and peps up a meal instantly are my all time favorite. Ubiquitous green chutney with fresh coriander & mint leaves in my refrigerator tops the chart by all means. Yes, I eat it with my flat breads, use as sandwich spread, on crackers, tarts, Khatti rolls, pizza topping…and so on.. Hummus is one another favorite of mine, a refreshing & healthy dip prepared with chickpeas or Garbanzo beans. The recipe is often twisted & tweaked to come up with yummy surprises..well..almost always 🙂

Wholewheat & Veggie Savory Cake – A Healthy Breakfast Treat

No Pancakes, no Parathas, no Upma and no Sandwiches please…we want something different for breakfast tomorrow” my son made a demand last night. “We are ready to wait for a little extra time mom, so no excuses” my daughter informed with a blink. First half of the night was spent turning from one side of bed to other, thinking about that ‘something different’. Why not take one ingredient each from all the breakfast recipes and …Yes I got it, now sleep tight Zzzzz…

Wholewheat from parathas, semolina from Upma, yogurt from pancakes and veggies from sandwiches and here I am with this healthy yet ‘something different‘ on a lazy Sunday morning breakfast table…Tada! Big smile on their faces and I know that the effort of baking this delightful savory cake is really worth taking 🙂
