Recipes | Wholewheat Buns and Spinach Litti – A Healthy Treat from Rustic India

Whole wheat buns/Baatis and Litti Chokha – the two most rustic regional recipes from India invoke a mixed emotion in me. If the later brings back the memory of my carefree days the former reminds me of the insecurity I felt during my childhood. Unable to cope up with the work pressure and childcare my working parents arranged for a 60 something nanny to baby sit me. The most prominent features I could remember about her is her wrinkled face, bony rough hands and the white muslin Potli (pouch) she used to bring daily from her home for her lunch.

She brought these unevenly round whole-wheat buns/baatis neatly packed in a white muslin cloth or potli every day. Hand pound wheat flour to make the buns, firewood used to cook them and fresh ghee smeared over those baatis revealed the hard life of villagers. I used to get scared when she lifted me with her wrinkled hands but loved to bite on those savory buns she brought. The feeling of insecurity of taken care by a stranger was somewhat subsided with these delicacies she brought each day.

Baking | Easy Eggless Cocoa & Pearl Millet Brownies

There are times when I prefer & rely more on my ‘quick fixes’ in cooking over the original recipes. The handy ‘quick fixes’ I invented for my convenience during the last 20 years in my kitchen are easy and more fun do with whatever is available at that particular day in my kitchen. And this Cocoa Brownie is one such recipe when I run out of chocolates…well, not exactly run out, but am raided of…want to know how?

Cozy family weekend when everyone crave for a scrumptious dessert and there is no signs of the chocolate bars I hide in refrigerator for a surprise Sunday dessert. Yes, this happens quite often at home, my two naughty pirates never get tired of raiding my refrigerator of all that is ‘Chocolate‘..chocltae chips, chocolate sprinkles and even the dark unsweetened chocolate cooking bars!

Mini Oat Tarts with Mixed Fruit & Yogurt Filling – Healthy Dessert to Indulge

Think of a dessert and fresh fruits top my list hands down. A bowl of sliced juicy strawberries, apples and grapes sprinkled with castor sugar or with fresh yogurt is what I and my hubby crave for. There is always a difference of opinion at home, my children love to settle for a  chocolate bar if there is just plain fruits for dessert. But they look pretty cool of late, now that they know their food blogger mama  needs to update her blog with a recipe every week 🙂

Strawberry Scones for Breakfast – A Scrumptious Way to Start Your Day

Strawberry is a fruit which brings smile to my face and saliva in my mouth ever time I see a pack in my supermarket. I just love the sight of these vibrant looking, dimpled chin Strawberries wearing curly green caps. As soon as I get my hands on them I start visualizing what will I be making with them…(if there remains some).

When I saw Scones on the Daring Baker challenge of this month by Audax, I knew exactly what I will be using my little babies for. And what a wonderful treat these Strawberry scones are to have it on my breakfast table!

Oh yes, even I am gearing up for my festive baking, eagerly waiting to share my goodies with friends. Chocolate & Vanilla Bread Pudding – Two Easy Eggless Desserts with Custard

Rain and water logging outside the house means no play and no friends coming home, only a hearty dessert can bring cheers to the dull faces of my children. A dessert in which I can engage them to bake minus the mess I might face as aftermath. Hmm..a muffin or a cookie look easy to bake but then sifting the flour, kneading, perfect consistency…nope, forget it. Bread Pudding…yes it could give them a false feeling of baking something without much fuss. Easy and literally a child’s play recipe, nothing beats a warm bread pudding on a rainy day, a perfect comfort food for any time.

And as expected they wanted chocolate in their recipe and added cocoa to their bread pudding. The chocolate custard bread pudding you see in the picture is assembled and baked by my children, I have to admit that I did polish off half of the Ramekin from their share 🙂

Wholewheat Carrot Brownie – A Healthy Treat to Celebrate

A slice of rich & dark Brownie is a delight for any chocolate lover, be it a gooey, chewy, fudgy or cakey brownie you just cannot stop with one. I like sticky and gooey brownies with loads of nuts in it, more better if it has some fruit or veggie hidden in it. Brownie is probably the easiest to make as against baking a cake, bread or any other goody. No waiting time needed for that intimidating yeast to work and flexing muscles for kneading the elastic dough, just mix it and bake it and you are in for a sinful treat. The treat is to celebrate Lite Bite being featured on Yummly today.

Wholewheat Chocolate Filled Croissants – A Delight to Bake

There are some recipes which never make to my wish list, Croissant being one among them. Tons of layers of butter and white flour simply does not motivate me to try these baked goodies at home. And we often end up in buying the same off the shelves from a nearby bakery for my children who love these crisp bakes. I almost brushed off this month’s Daring Bakers challenge aside when I saw Croissants on it, but thanks to Sarah who prompted me to bake them at home with her easy recipe presentation.

Fruit & Nuts Cookie Bars – An Easy Dessert and a Perfect Festive Sweet Recipe

Celebrations never end in India, just when I thought that the hectic months of festivals are over, Diwali is round the corner. Time to indulge in sweets and savories again. I love to make sweets which are easy to prepare without compromising on good taste, my time & of course health. Wholewheat & Cornmeal Goji Berry Scones – A Healthy Treat

“Madam we have a few exciting and new organic products on shelf this month” greeted the man in the shop. “Thanks shall check it out” was my quick & meek reply to the much baffled salesman and he understood that I wanted to be left alone during one of my monthly visits to the health stores nearby.

Never did I know that I was in for a surprise, yes I spotted Goji Berries! I looked at the salesman who was probably a bit upset with my reply and smiled. Yes, I am holding one of the most nutritious and powerful super foods in the world – Goji Berries!

And from the day I got my hands on these wonder foods, I am on a ‘Goji spree’. It is as if I want to make up for all that I lost for so many years without these berries.
