Recipe & Food Styling | Healthy Oats Cookies – Always remember to smile and look up at what you got in life..

The year 2016 has been a whirlwind.

I met so many amazing people, ventured into a couple of projects involving uncertainty, yet successfully completed all and learned so much last year. With all the ups and downs of last year, the one thing I always remember is to smile and look up at what I got in life.

Recipe | Orange Almond Cookies

Books make great gifts because they have whole worlds inside of them. And it’s much cheaper to buy somebody a book than it is to buy them the whole world!” ~ Gaiman.

I received two beautiful cook books, ‘The Café Spice’ and Silk Road Vegetarian’ from Tuttle publishing sometime back .

I was intrigued by the name ‘Silk road vegetarian’. I vaguely remember reading about silk route in my Geography lessons and was eager to find the connection between a ‘road’ and food.

“We have to continually be jumping off cliffs and developing our wings on the way down.” ~ Vonnegut

It has been over 5 years already and I still remember that moment when I decided to start a blog. My hands were unsteady, my heart pounding hard & loud….and I clicked that ‘enter’ button to begin my online journey through Lite Bite.

I had absolutely no idea or expectation as to where this journey will take me to. But what an amazing journey it has been!

Over the years, I am able to carve a beautiful path to reach to my dreams through Food blogging with the support of my loving family & friends.  Hmm…well, as they say “You can’t go wrong where there is love and inspiration”.

Recipes |Indian Spiced Wheat-Germ Muffins and Finger Millet Cookies – Food brings people together

We spent some quality time talking, reflecting and sharing some of our personal and professional matters with each other. We did more of window shopping than the actual prop shopping as she had restriction to carry the luggage in flight.

We never stopped talking and sharing food tips all along our way to market much to the chagrin of some shop keepers who were expecting us to do more of shopping than talking 🙂

I add a handful of black sesame seeds to whatever I cook or bake at home, be it a Sambhar, Rasam, rice, or any Indian subji which takes care of the calcium intake of my family” A tip from her which is religiously followed by me hence-forth.

Recipes | Three Eggless Wholegrain Cookies and being Thankful for the Choices I Have Made in Life

There is nothing more admirable than when you see your work getting recognized in your own homeland, all the more so, when you are staying away from it. But as they say, we may leave a house or a town, but that does not mean those places leave us.

Whenever I miss my hometown in Udaipur, I would sneak into this online News portal ‘Udaipur Times’ for hourly updates and latest happenings in my town. But never thought that some day I will make ‘News’ in the same.

And just when I was sitting back and reminiscing about what all good the year 2013 has brought in for me, I got yet another pleasant surprise. I found my name in the list of “Top 30 Indian Food Bloggers of 2013, first on Awesome Cuisine and then on Rediff.com, a very trendy online web portal.

I couldn’t have asked for anything better. These are times when I take pride in what ever I have achieved and feel thankful for the choices I have made in life.

Recipes | Three Healthy Wholegrain Cookies – Baking is Pure Magic

My kitchen is warm from the heat of oven and the smell of baked cookies is driving me crazy. Baking is pure magic. I know, I have repeated the statement over and again in many of my posts…can’t help.

Flour, butter and a few add-on and you have one of the crunchiest of goodies to munch upon. Baking cookies is such a cinch and I often involve my children in the process of rolling and cutting out cookies.
But I don’t wish to keep posting recipes alone which will dilute the purpose of my blogging. I blog to share memories and the nostalgia associated with the food alongside the recipes I cook in all my blog posts.

That hand-written small piece of paper struck with a magnet on my fridge ‘There is a life beyond your blog, Sanjeeta, go easy’ keeps me grounded.

Baking | Two Shortbread cookies to Celebrate A Life Full of Surprises

Life is full of surprises. Just say ‘never’ and you’ll see.’ I did say ‘never’ to this Samsung Notebook after posting my entry for a recipe contest by Del Monte. And today when I open the parcel marked with ‘Winner – 1st Prize’ I understand that it takes more than just magic to make any dream a reality. These are the moments when all those unseen tiny efforts you put in to keep your passion alive seems worthwhile.  Thanks Del Monte and IndiBlogger for making it happen! The winning recipe a  No-Bake Chocolate Brownie is an easy treat you can make well ahead of time during festive season.

Some news travel faster than lightening. I found myself standing near my oven, baking goodies for friends way before the feeling of winning this pretty Notebook could sink in 🙂

Baking | Scrumptious Date Filled Cookies or Ma’amoul and Soulful Essence of Middle Eastern Cuisine

My knowledge about Middle Eastern cuisine is very limited, its either a creamy Hummus, spicy Kebabs, handy falafel sandwich or a luscious Baklava. I always think that there is not much scope for a vegetarian to venture into the same. But the past couple of years of food blogging changed my perspective of food and I now enjoy cooking & eating out of my comfort zone.

Sometime in July 2012 when a dear food blogger friend Faith from Edible Mosaic mailed me that she is in the process of publishing her cook book and asked me if I would be interested to review her book. I was excited for her new venture and felt honored to be a part of her world of dreams. A wonderful friend who was the very first AFBLHS guest on Lite Bite and is a great support from the my early days of blogging.

Baking | Two Healthy Eggless Chickpea Flour Cookies – Chocolate and Cardamom Flavoured

The rustic iron Wok which was abandoned long back sits pretty in the backyard of my mom’s place after the entry of  that swanky oven in her kitchen. This black heavy-bottom wrought iron wok has been a part of our childhood memories for long. The melt-in-mouth cookiesNaan Khatais, Baatis and sort of spongy cakes she baked in it makes this ‘wok’ an important  part of our growing years.

These Chickpea flour (besan) cookies were the most baked goodies in our indigenous oven. Half of the wok was permanently filled with sand and a thin aluminum plate served as the baking tray to bake.

Baking | Berry-Berry Healthy Corn flake Cookies – Cookie Is Where The Crunch Is

Try the dual flavor vanilla & chocolate cereal or this new variety of cereal in the shape of Planet & stars…and this one….” Phew..shopping for children’ food could be  so distracting than compelling due to endless choices in the same. These myriad choices do make life easy for busy moms with almost no cooking, quick & fuss free breakfast options in the market. But in the bargain I feel we loose on the natural and healthier foods and food products which were available a few years back.

Cereal was certainly not our bowl of breakfast in the growing years during late 60s and early 70’s. And then when plain cornflakes was first introduced in India it became a fashion statement and was welcomed with open hearts in many homes.
